Niku Udon: Easy Freezer Meal Recipe
You know how they say simplicity is best? This Beef Udon Noodle Soup proves it. It’s a bowl of simple light dashi broth and udon, topped with saucy-sweet simmered thinly sliced beef and onions. It’s so easy to make with freezer ingredients, the flavors are clean yet savory, and it just feels so healing. In fact, this noodle soup is light enough for everything from a quick breakfast to a light dinner.
With frozen sliced hot pot beef and frozen udon, this yummy meal comes together in less than 20 minutes! You simmer your beef and onion, cook udon and veggies in broth, assemble your bowl, and you’re done!

Beef Udon Noodle Soup Is A Cold Weather Remedy
Around this time, it gets chilly here in Vancouver, and there’s nothing quite like a warm bowl of noodle soup to fight the cold. This morning, I woke up feeling a little under the weather. With a girl’s trip to Vegas ahead of me, I had to stay healthy and warm. Naturally, I decided to make myself a bowl of hot Beef Udon Noodle Soup—because let’s be real, hot noodle soup makes everything better.
Use Frozen Udon For Fast Easy Udon Noodle Soup
I prefer to use frozen udon when making dishes like Udon Noodle Soup or my Mushroom and Basil Udon. Frozen udon is fresher than vacuum-sealed udon, so it doesn’t fall apart as easily after cooking. You can easily find frozen udon in the Asian Freezer section near potstickers. If you can only access vacuum-sealed udon, that’s ok too! You may have to reduce the cooking time a little so they’re less likely to get soggy.
Of course, if you have fresh or dried udon, that also works! Make sure to follow the cooking instructions for your noodles, then just assemble your bowl as usual.

Other Beef Udon Soup Toppings You Will Love
The classic Niku Udon toppings you’ll see when you order at restaurants can include fish cakes, green onion, tempura flakes, or poached eggs. They’re all super tasty – so if you have a chance, add these into your own Beef Udon Soup! Sometimes to keep things easy, I just add the side dishes i have in the fridge from meal prepping, like half of a marinated mayak egg.
To keep up with my veggies in my meal today, we used fresh broccoli and carrots, but it’s easy to switch these out with frozen vegetables as well if that’s all you have.

Beef Udon Noodle Soup Ingredients
- 1 medium onion thinly sliced
- 2-3 stalks green onion cut into 2-inch pieces; reserve some for garnish
- 1 pack hot pot sliced beef around 300–400 g
- 3 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp sake
- 1/2 tsp black pepper
- 4 cups dashi stock
- 3 packs frozen udon
- 1/2 cup broccoli florets
- 1/2 cup sliced carrots

How To Make Beef Udon Noodle Soup
- Prepare your udon noodles according to
- In a pan, sauté sliced onions for 2 to 3 minutes until they’re soft and translucent.
- Add thinly sliced beef and cook for 2-3 minutes.
- Season with soy sauce, mirin, sake, and a pinch of black pepper.
- As your beef and onions cook, heat up your dashi stock and cook the frozen udon right in the broth along with carrots and broccoli.
- Let the mixture simmer for about 10 minutes, letting all those amazing flavors come together.
- Assemble your noodle bowl: place your noodles in a bowl, line them up with broccoli, carrots, beef, and onion, and finish by topping the plate with thinly cut green onion.
