One of my grandma’s secrets to staying youthful is to consume collagen-packed foods such as pork hock, jellyfish, and collagen broths like this chicken feet soup. Slightly milky from the high collagen content, this Pork Ribs and Chicken Feet soup contains tons of other ingredients with herbal benefits.
In today’s broth, we add Chinese red dates, which helps with circulation, and goji berries, high in antioxidants, Vitamin C, and fiber. We’re also adding white peppercorns, a milder and earthier flavor compared to black pepper. Its peppery kick really highlights the fantastic umami flavor of the broth. What I Eat In A Day: Cooking Dinner For Two
Cook with me this week while we’re having a super busy day! It was a hectic day, because Dom got all his wisdom teeth removed and we had a family emergency. I felt so bad for him, because it seemed like he was in so much pain!
For today, Dom needed food that was easy to chew. For our dinner for two, I made this pork and chicken soup along with a steamed egg and a stir-fried Taiwanese cabbage with bacon. It’s a cozy dinner that reminds me of home-cooked dinner with my parents.
Prepping and Cooking Chicken Feet
I know what you are thinking … ugh chicken feet? Chicken feet are packed with collagen, which relieves joint pain, AND it’s perfect for your skin. It’s low in calories and affordable! They’re a crucial ingredient in making the most gelatinous collagen broth.
Make sure you prepare your Chicken Feet before cooking. To prep chicken feet properly, cut off all the nails from the chicken feet and scrub the chicken feet clean. Once cleaned, they’re ready to blanch!
If you can’t find chicken feet, you can also use chicken wings, but they will be more expensive!

The Key To Making Good Collagen-Packed Broth
Making a good broth is a lot of work, but it’s the perfect thing for your body to heal when you’re feeling under the weather!
The most important step to making any bone broth is to blanch the meat. To remove the scum, blanch them with ginger, green onion, Chinese cooking wine, and water. Once all the scum comes out, drain and rinses clean. This step is crucial because it will get rid of all the impurities, and helps ensure your broth comes out clear and pure.

Pork Ribs and Chicken Feet Soup Ingredients
- 1 pound Pork Ribs
- 1 pound Chicken Feet
- 2 stalks of Green Onion
- 3 slices of Ginger
- a drizzle of Rice Wine (optional)
- 6 cloves of garlic
- 1 tbsp of White Peppercorn
- 8-10 cups of water
- 2 whole Corn, cut in halves
- 8 Chinese Red Dates
- 1 small handful of Goji Berries (optional)
- Salt, to taste

How To Make Pork Ribs and Chicken Feet Soup
- Blanch the pork ribs and chicken feet in a pot of boiling water with green onions, ginger, and rice wine for about 10 minutes.
- Skim off the oil and impurities, drain the meat, and rinse with cold water.
- Add pork ribs, white pepper, and garlic into a new pot, fill with enough water to cover the ingredients and cook for 1 hour.
- Add corn, chicken feet, and Chinese dates.
- Cover and cook for another 20 minutes.
- Before serving, season with salt. Optional: add a small handful of goji berries at the end of cooking.

Collagen-Packed Pork Ribs and Chicken Feet Soup

- 1 pound Pork Ribs
- 1 pound Chicken Feet *Cleaned, see notes.
- 2 stalks Green Onion
- 3 slices Ginger
- 1 drizzle Rice Wine optional
- 6 cloves garlic
- 1 tbsp White Peppercorn
- 8-10 cups water
- 2 Corn on the cob cut in halves
- 8 Chinese Red Dates
- 1 small handful Goji Berries optional
- Salt to taste
Instructions
- Blanch the pork ribs and chicken feet in a pot of boiling water with green onions, ginger, and rice wine for about 10 minutes.

- Skim off the oil and impurities, drain the meat, and rinse with cold water.

- Add pork ribs, white pepper, and garlic into a new pot, fill with 8-10 cups of water, or at least enough water to cover the ingredients and cook for 1 hour.

- Add corn, chicken feet, and Chinese dates.

- Cover and cook for another 20 minutes.

- Before serving, season with salt. Optional: add a small handful of goji berries at the end of cooking.
