Weekly Costco Runs and Christmas Events
This week is full of Vancouver holiday events and family dinners! As I’m finishing up my work for the year, I made this delicious burrata pesto sandwich as brunch to start my day right. After finding fresh burrata on my weekly Costco trip last night, I had to make this sandwich because it reminds me so much of my trip to Montreal.

Burrata: A Creamy Cheese For Sandwiches
Burrata is a soft Italian cheese made with mozzarella and cream. It’s so light, creamy, and soft. It’s softness makes it easy to spread with a butter knife, making it the perfect addition to any sandwich. It has a sweet cream flavor that can balance sweet or savory easily. I found this burrata at Costco, and have been drooling over the though of having this sandwich for brunch today!
If you’re not able to find burrata, but still want to enjoy a creamy, cheesy sandwich, try using fresh mozzarella, brie, or goat cheese.

Easy and Quick Homemade Pesto
The star of this sandwich was definitely my tried and true homemade pesto recipe. This recipe takes under 5 minutes to make. It’s super convenient and a great staple for my weekly meal prep. I usually make this pesto in a big batch so I have some on hand just in case. This pesto keeps for up to 2 weeks in the fridge. I use it on a variety of things, like salads, pasta, and especially sandwiches like our pesto burrata today. I also have a pro tip on how to keep that pesto bright green every time! However, if you’re running low on time, jarred or storebought pesto always works.

What Bread To Use For Pesto Burrata Sandwich
Today I used a long ciabatta roll I found at the supermarket for this Pesto Prosciutto sandwich. It’s a little more hearty, and holds up well to the moisture of the pesto and weight of the denser burrata. Other breads I like to use for this sandwich include a baguette, sourdough bread, foccacia, or my double cheesy no knead bread.

Pesto Burrata Sandwich Recipe
- 1 Long Ciabatta Roll
- 2-3 Tablespoons Pesto
- ½ cup Fresh Greens
- ¼ Cup Pickled Radishes
- 2-4 Oz Prosciutto
- 1 ball fresh burrata

- Slice your ciabatta roll in half and then again lengthwise
- Spread pesto over the 2 bottom pieces of sandwich bread.
- Toast ciabatta slices in the oven at 350F for 2-3 minutes, or until desired crispiness.
- Add fresh greens, pickled radish, and prosciutto on top of the pesto side of the bread.
- Place your burrata on top and slice along the middle to open the creamy center, spreading half gently over each of the the sandwiches
- Place the top of the ciabatta over the burrata and compress lightly.
