I’ve been on a fusion food kick, so I decided to pair this classic Taiwanese flavor with a creamy green Cilantro Yogurt sauce. Tips for Amazing Taiwanese Fried Chicken Wings
I swear by marinating chicken wings before frying them. It tenderizes the chicken while adding some deliciously flavorful moisture into the meat. If you’re making a lot and need to prep ahead, you can marinate the meat the night before to make things easier for you. Plus, overnight marination makes it extra juicy and flavorful.
The soy sauce adds umami flavours to the dish and helps balance out the tartness of the green sauce. To make this recipe gluten-free, use gluten-free soy sauce or tamari in the marinade instead.

Taiwanese Fried Chicken Wing Batter
Taiwanese Fried Chicken is known for its super light, crisp batter. You want a thin enough batter that the skin is still crispy yet thick enough so the meat doesn’t dry up. This chicken wing recipe uses a similar batter and can be made using the typical deep frying method, or by air frying. I have the recipe for both listed below.
For large social gatherings or making in bulk, I always choose deep frying. It takes less time, and I can make more at once. Of course, deep frying always guarantees a more delightful crunch.
However, if you are making a smaller quantity for a weeknight dinner, the air-fried version is also super crispy and juicy. For the more health conscious, this recipe is totally worth the extra time! I added a layer of tapioca starch to my Air Fried batter to help it crisp up better during cooking.

Addicting Creamy Cilantro Yogurt Green Sauce
Inspired by the jalapeno cilantro crema that sometimes comes with tacos, this green sauce is so great paired with Taiwanese Fried Chicken wings. It’s spicy, garlicky, and herby, made with ingredients easy to find at the supermarket. Whether coating the wings or set aside for dipping, its tartness cuts so well through the fatty flavor of the crunchy fried skin from the chicken wings. It really is addicting!
I’ll be honest – this is a sauce i put on MANY things…not just chicken wings! It’s great with any proteins, like salmon, Air Fried steak, or grilled chicken. I sometimes also pair it with tofu patties! If you prefer a non-spicy version, skip the jalapeno in the sauce!

Fried Chicken Wings with Green Sauce Ingredients
Chicken WIngs & Marinade
- 1.5 lb of Chicken Wings and Drumettes
- 2 tbsp of Soy Sauce
- 1/2 tsp paprika
- Salt and pepper to season
- 2.5 tbsp of minced Garlic
Air Fryer Batter
- 1 Egg
- 4 tbsp of Corn Starch
- ¼ cup of Ice Cold Soda Water
- 1.5 cup of Tapioca Starch
Deep Fry Batter
- 1 Egg
- 1.5 cup corn starch
- ⅓ cup soda water (cold)

Green Sauce
- 1 small bunch of cilantro (around 2 cups)
- 2 jalapeno, seeds removed
- 1 lime
- 5-8 gloves of garlic
- 1 cup of mint
- ½ cup mayo
- ½ cup greek yogurt
- Salt and pepper to season

How To Make Taiwanese Fried Chicken Wings
DEEP FRY VERSION:
- Add in cornstarch, egg, and ice-cold soda water to the marinated chicken wings. Mix and let it rest for 7-10 minutes.
- In a pan, add oil to fry. Once the oil is hot, add in the chicken wings and fry for 6-7 minutes or until the chicken is golden brown and crispy.
- OPTIONAL: turn the heat up to high, and double fry for another 1 minute to make it extra crispy!
- Coat the chicken with a generous amount of green sauce and enjoy!
AIR FRY VERSION:
- Add in cornstarch, egg, and ice-cold soda water to the marinated chicken wings. Mix and let it rest for *20 minutes*
- Coat the chicken in tapioca starch, and let it rest for another 5 minutes.
- Preheat the air-fryer to 350F for 5 minutes. After 5 minutes, spray the air fryer to prevent the chicken from sticking, and add in the chicken.
- Spray some oil on top of the chicken (optional), and fry at 350F for 15 minutes.
- Coat the chicken with a gernous amount of green sauce and enjoy!

Marinated Chicken Wings
Batter: Air fryer version
- 1 Egg
- 4 tbsp Corn Starch
- ¼ cup Soda Water Ice Cold
- 1.5 cup Tapioca Starch
Batter: Deep Fry Version
- 1 Egg
- 1.5 cup Corn Starch
- ⅓ cup Soda Water cold
Spicy Creamy Green Sauce
- 1 bunch cilantro around 2 cups
- 2 jalapeno remove the seeds
- 1 lime
- 5-8 gloves of garlic
- 1 cup mint
- ½ cup mayo
- ½ cup greek yogurt
- Salt and pepper to season
Instructions
- Marinate the chicken with 2 tbsp of soy sauce, 2.5 tbsp of minced garlic, salt, and pepper for 20 minutes.

- While we wait, make the sauce by blending all the ingredients in the green sauce, let it rest in the fridge while you wait
