The sweet corn kernels are seasoned with that slightly creamy, but savory Taiwanese BBQ Sauce. It is the perfect summer appetizer and snack!

Taiwanese Night Market Grilled Corn

If you never tried Taiwanese Street Corn before, you are missing out. Whenever I go to night markets in Taiwan during the summer, you can smell the savory aroma of the corn from blocks away. There is something so satisfying about eating corn off the cob.

There are many different variations of Taiwanese Street Corn. There are Sacha, savory, and even sweet options. The Street Corn I am sharing today is savory and super addicting. Traditionally Taiwanese Street Corn is made on the grill. However, I can’t find a Taiwanese street food stand here, and I didn’t have a grill at the time. So, I made an easy, mess-free version in the Air Fryer that not only uses common ingredients, but satisfies my night market cravings as well. You can also use the marinade and grill, bbq, or bake the corn!

Taiwanese Street Corn (Air Fryer)

Creamy Taiwanese BBQ Sauce

Traditionally, the night market corn is covered in a creamy Taiwanese BBQ Sauce made with lard, sesame sauce, and seasonings. But, that can be hard to find when you have a last minute craving. So, I’ve adapted this recipe to use more familiar ingredients, but still have that signature rich, savory grilled flavors.

All you need is Japanese Mayo, Vegetarian Oyster Sauce, garlic powder, red chili flakes, five-spice powder, and black pepper. When air frying, this creamy sauce gets coated all over the corn, which helps crisp up the outer layer of the corn. This creamy mixture is just the base. You can also add other ingredients such as Sacha, hot sauce, or butter

How To Make Taiwanese BBQ Corn in Air Fryer

  1. Mix Japanese mayo, vegetarian oyster sauce, garlic powder, five-spice powder, a pinch of black pepper, and red chili flakes in a bowl. 
  2. Coat the corn with a generous and even amount of the mayo mixture. 
  3. Air-fry at 380F for 18 minutes, flipping halfway through. 

Air Frying Taiwanese Street Corn

Air Fryer is easy to clean and allows you to work on other recipes while the corn is frying in the air fryer. I also like using an air fryer as the corn cooks evenly, and the “frying” aspect resembles the grill marks you find at Taiwanese night markets. I use the Cosori Air Fryer Pro (Click To Buy!). If you don’t have an air fryer, you can use the grill or oven. Here’s how:

  • Oven: preheat the oven to 380F, bake for 25, and flip halfway through.
  • Grill: medium heat (around 375–400°F) and cook for 15–18 minutes, turning every 3–4 minutes.

    1. Hi Jon! I’d put the corn (without sauce) on the grill a little for about 10-12 minutes. 2-3 minutes before it’s finished, baste the corn with the sauce as you finish grilling. Let me know how it goes!
