High-Fibre, High Protein 10-Minute Edamame Salad
If you’ve ever had chilled edamame with ponzu at a Japanese izakaya, this salad will feel instantly familiar. This quick and refreshing edamame chopped salad comes together in just 10 minutes and is packed with plant-based protein, fiber, and plenty of crunch. The edamame adds a hearty bite, cucumber and onions keep it crisp and fresh. Tossed with sesame oil and kai dong’s Yuzu Sesame Dressing, you get the bright tang of yuzu and the nutty sesame flavor that makes it just as good straight out of the bowl as it is served as a side for a full meal.

Yuzu Edamame Salad Ingredients
- 1 ½ cups edamame cooked and shelled
- 1 cup cucumber finely chopped
- 2 green onions thinly sliced
- ¼ cup red onion finely diced
- 1 tbsp roasted sesame seeds
- 1.5 tsp sesame oil
- 4 tbsp kai dong Yuzu Sesame Dressing to taste
- 1 tsp furikake seasoning or more as desired

Edamame
Edamame is one of my favorite ingredients to toss into a salad. It is so much more than just a pop of green! These little soybeans are incredibly nutrient-dense. They pack tons of protein, fiber, and extra vitamins and minerals like iron, folate, and calcium in each little bean. They make your salad feel way more satisfying and hearty. The flavor is slightly nutty and buttery, which pairs perfectly with crisp veggies and a tangy dressing.

Yuzu Sesame Dressing
To bring all the flavors together, I’m using kai dong’s newest Yuzu Sesame Dressing. Made with Taiwanese Wentan yuzu vinegar, aged soy sauce, and a touch of white sesame oil, it has this bright citrusy lift with a gentle toasted depth that makes the edamame and cucumber pop. It’s my latest go-to dressing for quick, refreshing noodles or easy salads like this one.

Extra Add-ins For Edamame Salad
Sometimes I like to bulk this salad up with a few extra add-ins. If I’m craving something more filling, I add extra add-ins! I love adding veggies like bell pepper, avocado, or sauteed mushrooms for a different texture. For extra protein, try mixing in poke or your favorite grilled protein.

How To Make Edamame Chopped Salad
- In a large bowl, combine edamame, cucumber, green onion, and red onion.
- Drizzle in sesame oil and Kai Dong Yuzu Sesame Dressing. Then, toss well until evenly coated.
- Sprinkle over roasted sesame seeds and furikake. Mix again to combine.
- Taste and adjust seasoning or dressing as needed.
