I got so many requests for making my Spicy Noodle Soup, so here is my easy recipe ready in 10 minutes.

The perfect easy meal to make for any time of the day, customize your Spicy Noodle Soup with any toppings of your choice.

My Spicy Noodle Soup can be made vegetarian-friendly, and you can adjust the spiciness level.

Spicy Noodle Soup (10 Minutes!)

My Spicy Noodle Soup is my husband’s favorite late-night snack.

Healthier compare to regular instant noodle soup and takes only 10 minutes to make at home.

All you need to make the soup base is onion, green onion, garlic, miso paste, Korean red chili flakes, and your favorite.

I love dashi stock; it adds tons of umami flavor, but you can also use vegetable stock or chicken stock.

Depending on your spice tolerance, you can adjust the amount of Korean red chili flakes added to the soup.

The best part of homemade Spicy Noodle Soup is that you can customize it with any toppings of your choice.

I love adding fish balls, mushrooms, eggs, and spinach, so it has all carbs, protein, and vegetables, but you can also add in any other toppings of your choice!

Whenever my husband and I can’t decide what to eat for dinner, we will make our portions of spicy noodle soup with our personal choices of toppings.

Other toppings that can be added are thinly sliced hot pot meat, Nappa cabbage, ramen eggs, corn, tofu, and spam.

I buy instant noodles without the soup seasoning since we love the texture of instant ramen but want to opt out for a healthier alternative.

You can also use ramen noodles, udon noodles, vermicelli noodles, or gluten-free glass noodles.

I highly recommend checking out my super easy one-ingredient, two minutes only gluten-free noodles that will pair perfectly with this recipe. All you need is rice paper, and that’s it!

Ingredients

  1. In a pot, add oil, and turn the heat to medium-high. Once the pot is hot, add chopped onion and the white parts of the green onion, and saute for 2 minutes or until translucent. 
  2. Add in Korean red chili flakes, miso paste, and garlic, and mix till combined.
  3. Pour in the stock of your choice, and bring it to a simmer.
  4. Once simmering, add in noodles, and any toppings of your choice. 
  5. Finish by garnishing with the remaining green onion, and enjoy!

  1. I’m not able to identify which greens were used, and don’t see in ingredients, is it just chives? Also not able to identify what the squares are, it looks like tofu but since not seeing on ingredients list either. Nor the round food either. Please help because it looks good enough to make!

    1. Hi Diana! The beauty of this noodle soup is that you can add anything you want as toppings! In the pictures, I added spinach, fish balls, and frozen fish cakes. Tofu is also a great option!

  2. It was really delicious and simple to make. However, I made the mistake of putting too much chilli in for my rather low spice tolerance!! It was the perfect dish to try tofu for the first time. Highly recommend!
