In a pot, add oil, and turn the heat to medium-high. Once the pot is hot, add chopped onion and the white parts of the green onion, and saute for 2 minutes or until translucent.
Add-in Korean red chili flakes, miso paste, and garlic, and mix till combined.
Pour in the stock of your choice, and bring it to a simmer.
Once simmering, add in noodles, and any toppings of your choice.
Finish by garnishing with the remaining green onion, and enjoy!
