Whenever I walk into Nobu, I am welcomed by torched Mayo’s smokey and umami smell.
After many attempts at recreating the famous Miso Black Cod, here is my version that is easy and simple to make at home.
All you need is miso paste, mirin or honey, soy sauce, dashi powder, black pepper, and Japanese Mayo. Marinate the fish for at least 30 minutes or overnight.

My secret tip for SUPER tender salmon with a crispy umami crust is Japanese Mayo.
I HIGHLY recommend using Japanese Mayo for this recipe. While you can substitute for American Mayo, Kewpie Mayo is a STABLE item in my kitchen.
Because it provides the ultimate umami flavor, you can’t find in American Mayo. Below are the main difference between American Mayo and Japanese Mayo.
- First, Japanese Mayo is made with ONLY the yolk, which gives it richer flour and a custard-like texture.
- Second, No Salt and other seasoning are added except for MSG, which provides its umami flavor!
- Lastly, Japanese Mayo is made with Rice Vinegar, giving it a sweeter tang than American Mayo.
