If lactose intolerant, you can make Ginger Milk Tea with just the tea bag or swap it with soy or oat milk.
I personally love using 2% milk as I find that it provides the perfect amount of creaminess and richness. The only plant-based milk I wouldn’t recommend for this ginger milk tea is coconut milk.
I find that coconut milk leaves a thick residue at the top of your month when combined with ginger.

Ingredients
- 4 tablespoons loose-leaf black tea
- 3 thin slices of ginger
- 4 tablespoons red sugar or brown sugar
- 5-8 Chinese red dates
- 6 cups of water
- ¾ cup sago or mini tapioca pearls
- ½ cup milk
- In a pot, add loose-leaf black tea, ginger, red sugar, and Chinese red dates. Turn the heat to medium, and pan-fry for 3-4 minutes or until the brown sugar has become slightly smokey.
- Pour in 6 cups of water and bring to a simmer. Simmer for 20 minutes on medium-low heat, and strain all the ingredients.
- Bring the pot back to a simmer, and once simmering, add in ¾ cup of sago. Stir and keep cooking for 20 minutes.
- After 20 minutes, stir to ensure nothing is sticking to the bottom, and turn the heat off. Put the lid on and let it rest for 10 minutes.
- Pour in milk or tea, and enjoy!
