A Yummy Fusion Shepherd’s Pie
It’s fusion Friday again, and today, we’re making a Curry Shepherd’s Pie, a twist of the British classic. Typically, a Shepherd’s pie is made with season browned ground beef under a thick crust of mashed potatoes. Today, we’re adding some extra spices and seasonings for a delicious curried version. It’s a cheesy casserole great for a family or group dinner.

- 4 cloves of garlic
- 1/2 onion
- 1 tsp tumeric
- 1/2 tbsp curry powder
- 1 1/2 tsp salt (adjust as needed)
- 1 tsp coriander powder
- 1 tsp cayenne
- 2 tbsp of Worcestershire sauce
- 1 1/2 tbsp of tomato paste
- 1 1/2 tbsp of flour
- 1/2 cup of beef stock
Mashed Potatoes
- 4 potatoes
- 1/4 cup of butter
- 1 1/2 tsp salt
- 1/2 tsp white pepper
- 1/4 cup shredded parmesan cheese
- 2 egg yolks

Curried Beef
The star of this Shephard’s pie is the curried ground beef. To start, we grate in onion, carrots, and garlic, rather than chopping them up to be mixed in. This helps get their aromatic flavors really engrained into the sauce. If you like a little texture, feel free to chop these up and sauté them instead.
For that signature curry flavor, we’ll add coriander, curry powder, turmeric, and cayenne. It not only seasons this beef base, but also gives it that bright yellow color.

Cheesy Parmesan Mashed Potatoes
Shepherd’s Pie is topped with a layer of fluffy, smooth mashed potatoes – one of the simplest comfort foods ever. For shepherd’s pie, you’ll need a sturdier, more dense mashed potato to help hold its shape while you’re eating. To achieve that, we add both shredded parmesan cheese and egg yolks. As it bakes, the shredded parmesan melts into the potatoes and turns into a nice crust as well. On the other hand, the egg yolks in this mashed potato also gives it a much smoother texture.
