Super Easy Noodle Salad Under 10 Minute
It’s Dom’s birthday this week, so this week will be full of celebrations and feasts. Before I get started with all of the prepping, cutting, and cooking, I have to refuel with a super quick meal. This 7-minute scallion oil noodle salad is exactly what I need to fill up right before I get started on cooking all the tasty birthday treats, from Oxtail Soup to Lemon Blueberry Loaf.
I love how refreshing and easy this noodle salad is, because you can add all sorts of veggies in! Today, we adding some spring mix with shredded cucumbers, the perfect vegetables to coat in that scallion-shallot aroma.
Golden Shallot Noodle Salad Ingredients
- 2 tbsp Four Season Scallion Sauce
- 1 tbsp Golden Shallot Oil
- 1 tsp sesame seeds
- 1 pack Hand Cut Noodles
- 1 cup spring mix
- 1/4 cup shredded cucumbers
- 1 stalk green onion
- 1 Fried Egg
Garnish
- green onion chopped
- sesame seed
- 1 tsp. Four Season Scallion Sauce

Golden Shallot Salad Dressing
This noodle salad is particularly tasty with that Golden Shallot Salad Dressing that fills your nose with shallot flavor as you’re eating. To get that super deep, fragrant shallot-scallion oil flavor in our noodle salad, we’re using Golden Shallot Oil as a base. Then, we add in Four Season Scallion Sauce for some savory, oniony flavor.
With just these 2 sauces, you won’t have to add anything extra. But, if you like a little sour, you can also add a splash of black vinegar. For those who love a little spice, add a scoop of chili oil too!

Noodles For Your Salad
Whenever I’m making noodle salads, my go-to noodles are the kai dong Hand Cut Noodles. They’re thick and ribbon-like, and so easy to grab on to all tasty dressing in the salad. Even after cooking, they have that bite in them that bounces back as you chew.
For this noodle salad, you can also use pasta or wheat noodles to get that same chewy texture that still soaks up all that dressing in the right way. If you’re gluten-free, rice noodles are a great alternative as well.

How To Make Shallot Noodle Salad
- In a bowl, mix Golden Shallot Oil, Four Season Scallion Sauce, and Sesame Seeds.
- Cook the noodles according to package instructions. Optional: rinse your noodles in cold water for a bouncier texture.
- Add cooked noodles, spring mix, shredded cucumbers, and chopped green onions to the bowl with the dressing. Mix until well incorporated.
- Top with a fried egg, and garnish with sesame seeds, chopped green onion, and Four Season Scallion Sauce.
