Extra Thin Almond Crisp Cookies

These super thin and crunchy Almond Crisp Cookies are the go-to snacks you'll find at any Asian bakery - if you know, you know! Sweet enough to satisfy your sweet tooth - but not enough to be too sweet. It is a stress-free snack recipe to make in bulk ahead of time for a party, or just to have on hand when guests are over. This month, I made them for the home cafe experience I created in my house for 22 of my favorite people, and everyone loved these almond cookies! These Crunchy Almond Cookies are the cookies to bake this holiday season!
Ingredients
- 3 Egg Whites
- ½ cup Sugar
- 1 Teaspoon Salt
- 1 Cup Cake Flour
- 1 Cup Sliced Almonds
- ¼ Cup Melted Butter
Instructions
- Add your egg whites, sugar, and salt to a large mixing bowl and whisk until smooth.
- Sift your cake flour in with the egg mixture and whisk together.
- Add in Almonds and fold together until almonds are evenly coated.
- Pour melted butter over top and fold together gently until mixed through.
- Preheat the oven to 350F.
- Use a tablespoon, spoon the mixture onto a parchment paper-lined baking sheet, about 2 inches apart on a baking sheet
- Use wet fingers to spread the batter out thinly and evenly so it becomes a more wafer shape.
- Place in the oven at 350 degrees for 8-10 minutes or until the cookies are slightly golden brown.
