Almond Cookies: The Best Holiday Stocking Stuffer
This Almond Cookie recipe is actually my gift for Dom on our second date! It might just be all the happy memories of that day, or all the ones after – but he still swears these are the best cookies he has ever had. He gets so excited when I make them! I usually make these crunchy almond cookies in bulk around the holidays since they make such great gift for friends and family.
These wafer-thin cookies are so easy to throw together, with simple ingredients you already have at home. For my 22-person home cafe event, this Almond Cookie is perfect paired with matcha latte and pesto pasta salad. This event was such a fun way to show appreciation for some important people in my life. The best part way testing these recipes in the kitchen with My mom all week!
Gluten-Free, Healthy Almond Crisp Cookies
This Almond Cookie is made with simple, but surprisingly healthy ingredients. The main ingredients are egg whites and almonds so this almond cookie is a high protein cookie! Almonds are packed with essential vitamins and minerals, including Vitamin E, Magnesium, and Calcium, which support bone, skin, and immune health.
If you replace the cake flour in this recipe with almond flour, you can a completely gluten-free almond crisp cookie!

Keeping Your Almond Crisps Perfectly Crispy
This thin, crunchy Almond cookie is so easy to perfect, and you will have a hard time only eating one! The key to perfect cookies every time is spreading each cookie thinly and evenly before baking. If they’re too thick while baking, they’ll still be tasty, but missing their signature crispiness.
To make sure each cookie has that great crunchy, crisp texture, I dip my fingers in water and spread the batter very thinly on the parchment paper before baking. This way, the dough won’t stick to my fingers and create a big mess. Don’t worry about them being perfectly round, they even themselves out in the oven.

Almond Crisp Ingredients
- 3 Egg Whites
- ½ cup Sugar
- 1 Teaspoon Salt
- 1 Cup Cake Flour
- 1 Cup Sliced Almonds
- ¼ Cup Melted Butter

- Add your egg whites, sugar, and salt to a large mixing bowl and whisk until smooth.
- Sift your cake flour in with the egg mixture and whisk together.
- Add in Almonds and fold together until almonds are evenly coated.
- Pour melted butter over top and fold together gently until mixed through.
- Preheat the oven to 350F.
- Use a tablespoon, spoon the mixture onto a parchment paper-lined baking sheet, about 2 inches apart on a baking sheet
- Use wet fingers to spread the batter out thinly and evenly so it becomes a more wafer shape.
- Place in the oven at 350 degrees for 8-10 minutes or until the cookies are slightly golden brown.
