Spicy Garlic Peanut Noodles takes less than 5 minutes to put together with simple ingredients you already have at home. Warning, this noodle recipe is incredibly addicting, and you may be having this for the rest of the week, don’t say I didn’t warn you!
Spicy Garlic Peanut Noodles is vegetarian-friendly, but you can add so much topping depending on how much time you have and what’s in your kitchen. Some of my favorite toppings are shredded chicken, sliced cucumber, fried garlic or shallots, and thinly sliced eggs.

The key to a delicious Spicy Garlic Peanut Noodle is chili oil. Of course, you can use your store-bought favorite chili oil, but I HIGHLY recommend using my Homemade Chili Oil that is not only tasty but super easy to make at home as well.
I have been making my own Homemade Chili Oil for years now because I could never find a store-bought one that was spicy, numb, garlic, or flavourful enough! I restock my chili oil every 2-3 months, and I always have jars in my fridge ready to go. It lasts in the refrigerator up to 3 MONTHS, and I use it on everything, noodles, wontons, dumplings, eggs, radish cakes, homemade buns, literally EVERYTHING.
The noodle I am using today is fresh wide white noodles. I found them at my local Asian Supermarket. If you don’t live near an Asian Supermarket, some of my favorite noodles that I recommend include Wu-Mu Dry Noodle, Chinese Dry Noodles, and Asha Foods Noodles (Linked).
Ingredients
1 Serving of Noodles
1.5 tbsp of Peanut Butter
3 cloves of Garlic (grated)
2 tbsp of Black Vinegar
2 tbsp of Homemade Chili Oil
3 tbsp of Hot Noodle Water
Cilantro
Green Onion
Fried Shallots
- Prepare your favorite noodle; make sure to season the water with salt.
- In a bowl, add peanut butter, grate in 3 cloves of fresh garlic, 2 tbsp of black vinegar, 2 tbsp of Homemade Chili Oil, and 3 tbsp of Hot Noodle Water. Mix until everything is combined. Add in more hot pasta water if needed till smooth consistency.
- Add the noodles to the bowl and mix them. Garnish with cilantro, green onion, fried shallots, and any toppings of your choice. If you like it spicy, drizzle on another tbsp of homemade chili oil to finish off.

Easy and delicious. Great fresh recipe for quick cooking after a long day at work. I used fresh med wide egg noodles. Added veggies and a splash of lime.
