If you have leftover fruit you need to use up, make this easy fruit salad with a tart honey–lemon syrup. I made this salad as a simple fridge clean-out recipe, but once everything was chopped and tossed with the syrup and mint, it turned into the one thing I couldn’t stop snacking on all week. It’s chilled, refreshing, and effortless! Whether you pile it on top of pancakes, scoop it over yogurt, or enjoy it as a light dessert, this salad disappears fast.
Prepare the fruit: Wash and dry all fruit.- Chop strawberries and kiwi into bite-sized pieces- Halve the grapes.- Peel and dice orange and mango if using
Make the syrup: In a small bowl, whisk together honey, lemon juice, and lemon zest until smooth.
Toss the salad: In a large mixing bowl, combine all the prepared fruit.
Add Syrup and Mint: Drizzle the honey-lemon syrup over the fruit, and add in the chopped mint. Gently toss until everything is evenly coated.
Chill & Toss: Refrigerate for at least 20 minutes to let flavors meld. Serve chilled, garnished with extra mint leaves if desired
