Fruit Salad: Easy Meal Prep Side, Topping, or Dessert

I’m meal prepping for the week while also cleaning out the fridge, because I always like starting the weekend with a fresh, empty fridge. Honestly, fruit always tastes better once it’s washed and chopped for you, and that’s exactly why I love this simple fruit salad. It came together with whatever fruit I had left, and with the honey–lemon syrup and fresh mint it is extra bright and refreshing. It’s perfect for the summer! I catch myself grabbing a spoonful every time I open the fridge.

This fruit salad is delicious on its own, but I also love it as a quick topping. I love it over chia seed pudding, sprinkled on top of my Cottage Cheese Pancakes, or even over of a scoop of vanilla ice cream when I want something light and sweet.

Honey Mint Fruit Salad Ingredients

  • 1 cup strawberries hulled and chopped
  • 2 kiwis peeled and chopped
  • 1 cup blueberries
  • 1 cup green grapes halved
  • 1 cup purple grapes halved
  • 1 orange peeled and segmented (optional)
  • 1/2 mango peeled and diced (optional)

Lemon Mint Syrup

  • 2 tbsp honey
  • 1 1/2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 tbsp fresh mint leaves finely chopped

I love that you can add any fruit into this fruit salad. Since we’re cleaning out the fridge today, I’m using the rest of the blueberries from my mom’s garden that’s leftover from my weekly blueberry syrup for my matcha latte, as well as red and green grapes, kiwi, and strawberries. It’s tasty, and actually packed with antioxidants and Vitamin C!

I promise, what starts as odds and ends from the fridge becomes a bright salad that disappears faster than you think. Make sure to cut each fruit into similar bite-sized pieces. Remove any seeds or tough peels, so every scoop is easy to eat

Honey-Lemon Syrup

The honey–lemon syrup is what takes this from just a bowl of chopped fruit to a real fruit salad. Made with only honey and lemon, this simple addition is actually a MUST HAVE for this salad. A little sweetness from the honey helps balance out any tart fruit, while the lemon juice and zest brighten everything. The lemon juice is also the secret ingredient that keeps fruits like apples or bananas from oxidizing and browning too quickly.

How To Make Lemon Honey Fruit Salad

  1. Prepare the fruit: Wash and dry all fruit.
    • Chop strawberries and kiwi into bite-sized pieces
    • Halve the grapes.
    • Peel and dice orange and mango if using.
  2. Make the syrup: In a small bowl, whisk together honey, lemon juice, and lemon zest until smooth.
  3. Toss the salad: In a large mixing bowl, combine all the prepared fruit.
  4. Add Syrup and Mint: Drizzle the honey-lemon syrup over the fruit, and add in the chopped mint. Gently toss until everything is evenly coated.
  5. Chill & Toss the salad: Refrigerate for at least 20 minutes to let flavors meld. Serve chilled, garnished with extra mint leaves if desired
