Oklahoma-Style Smashed Double Cheese Burger
Hi guys. We just got back home and we are both craving burgers. We have some ground beef at home. So, I figured we should make an Oklahoma-style Smash Burger. This version of the burger has thinly sliced onion smashed into the patty so it caramelizes inside. I’m also making a yummy, creamy homemade burger sauce for this burger that’s creamy, tangy, and just the right balance.
This burger recipe is a 10 out of 10, and Dom even asked for another right away! I don’t think I ever go back to takeout burgers ever again because these are actually surprisingly so easy to make at home and honestly way more satisfying. Dom and I may or may not have had burgers four times this week after making it the first time.
Smash Burger Ingredients
Homemade Burger Sauce
- 4 tbsp mayo
- 1 tbsp ketchup
- 2 tsp mustard
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 2 tbsp pickle juice
- 2 tbsp Sizzling Black Pepper Sauce optional
Smash Burger
- 8 oz ground beef
- salt and pepper
- 1/2 onion thinly sliced
- 2 slices cheese
- 2 burger buns
- sliced pickles

Homemade Smash Burger Sauce
This homemade smash burger sauce is creamy, tangy, and just a little smoky. It’s the perfect match for adding into your burger, or even just as a dipping sauce for your fries or crispy potatoes.
Made with a creamy base of mayo with ketchup and mustard, this tastes just like a classic diner burger sauce. I’m adding bit of paprika and garlic powder for a smoky savory flavor. A little splash of pickle juice gives the sauce a bright pop, and that tang cuts right through the richness of the beef.

Creamy Black Pepper Burger Sauce
After a few nights of burger experimentation, here’s another sauce variation that I’ve been loving! This is the Creamy Black Pepper Burger Sauce, which uses the homemade burger sauce as a base, but uses kai dong Sizzling Black Pepper Sauce as well.
This dressing tastes like thousand island sauce meets Sizzling night market black pepper plates! I definitely recommend this sauce combined with Swiss cheese and caramelized onions as a topping. It’s also really tasty with fries, or inside a sandwich!

Smash Burger Patty
The most unique part about a smash burgers is how you make the beef patty. To make the patty, I usually choose ground beef with an 80/20 ratio of lean beef to fat. Instead of forming a thick round, you start with a loose ball of ground beef and press it hard against a hot griddle or flattop. That quick smash takes advantage of the Maillard reaction to create a crispy crust all over.
For the Oklahoma-style patty, thinly sliced onions are piled right on top of the beef before smashing, so they caramelize directly into the patty. The result is a thin burger patty that’s smoky, salty, and full of crunchy-sweet onion flavor in every bite.

Hamburger Buns
The best hamburger buns for this yummy smash burger is the classic potato bun. They’re super soft, yet study enough to support the patties after toasting. Potato buns taste slightly sweet and buttery, which balances the salty crust of the beef and the tang from pickles or sauce.
If you can’t find potato buns, you can try the regular white buns, or Hawaiian burger buns.

Toppings For Your Burger
The best part about grilling burgers at home is that you can totally make it your own. I like mine the classic way, a super simple cheesy double patty and homemade sauce topped with slices of pickles. You can add literally anything, from lettuce, tomatoes, sauteed mushrooms, to whatever you are craving.


How to Make Smashburger At Home
- Make the sauce: In a small bowl, whisk together the mayo, ketchup, mustard, paprika, garlic powder, and pickle juice. Set aside.
- Form the patties: Roll the ground beef into two 4 oz balls. Place them on a hot flattop or cast-iron skillet. Season the tops lightly with salt and pepper.
- Add the onions: Pile about half of the sliced onion on top of each beef ball. Place a piece of parchment paper over the onion and use a sturdy spatula to firmly smash the beef down into a thin patty, pressing the onions into the meat.
- Cook the first side: Let the patties cook onion-side down for 2–3 minutes, until the edges crisp and the onions begin to caramelize.
- Flip and melt the cheese: Flip the patties, season the cooked side with a pinch of salt, and immediately top each with a slice of cheese. Cook for another 1½–2 minutes, until the cheese melts and the patty is fully cooked through.
- Toast the buns: While the patties finish, toast the cut sides of the burger buns directly on the grill or skillet until golden.
- Assemble burger: Spread about 2 tbsp of burger sauce on the bottom bun. Stack both patties on top, add your favorite toppings, then finish with the top bun.
- Serve immediately: Press gently, and enjoy while hot.
