There are many cuts of beef that you can use to make Beef Udon Stir-Fry.
I am using hot pot thinly sliced beef short ribs today.
Beef short ribs have a beautiful marbling, which helps the beef become super tender when cooked.
You can find many thinly sliced beef options at most Asian grocery stores. If not, you can also freeze the meat overnight, and using a sharp knife, thinly slice up the meat.
I prefer to use Frozen Udon when making Izakaya Style Beef Udon Stir-fry.
Frozen Udon is fresher than vacuum-sealed udon; therefore, it can absorb more of the sauce and not break as easily.
You can easily find Frozen Udon in the Asian Freezer section near potstickers.
Pour hot water all over the udon before cooking to separate the udon. This step will cut down the cooking time and prevent the udon from becoming soggy.
If you can only access vacuum-sealed udon, microwave for 30 seconds to help separate the udon before adding it to the sauce.

Ingredients
- 2 packs of Frozen Udon (500g)
- 350g of thinly sliced Short Ribs
- 1/2 Onion (sliced)
- 4 cloves of Garlic (sliced)
- 3 Stalks of Green Onion (cut into 2-inch pieces)
Sauce
- 3-4 tbsp of Bonito Flakes (crushed)
- 1 tbsp of Butter
- 2.5 tbsp of Soy Sauce
- ½ tbsp of Black Pepper
- 1 tbsp of Mirin
- 1/4 cup of Dashi Stock or Beef Stock
- Mix dashi stock, soy sauce, black pepper, bonito flakes (optional), and mirin in a bowl.
- Pour hot water over the frozen udon, so it separates.
- In a pan, drizzle in oil and turn the heat to medium-high. Once the pan is hot, add sliced onion, the white part of the green onion, garlic, and saute together for 3-4 minutes or until the onion is translucent and soft.
- Next, add the beef and sautee together for 1-2 minutes or until the meat is soft.
- Add in frozen udon and drizzle on the seasoning sauce. Statue on high heat for another 3-4 minutes or until the udon soaks up all the sauce.
- Optional, but HIGHLY recommended, before serving, add 1 tbsp of butter and mix.
- Garnish with more bonito flakes and chopped green onion
