My Favorite Savory Egg Sandwich
I’m training for my first half marathon as a complete beginner in 4 months. As someone who used to hate running, I’m learning to move with love, eat with joy, and take care of my body. I have a 10K run later today, so I need a very filling breakfast to help me stay running.
Today, I’m making one of my favorite savory egg sandwiches: a sweet and spicy cottage cheese avocado toast with scallion scrambled eggs. It’s really easy, packed with lots of protein, and actually tastes really really good. Even those who don’t like cottage cheese will love that creamy, spicy-sweet bite. It takes less than 10 minutes to make, and it’s been my go-to meal lately before a long run.

Best Bread For Avocado Toast
Avocado toast is best with a bread that doesn’t get soggy quickly after toasting. I’m using sourdough bread for my avocado toast since it gives me that crispy, chewy bite. The tartness of sourdough also is a great contrast with the creaminess of avocado and cottage cheese.
Since I’ve been training for my first half marathon, I haven’t really had time to bake over the weekends. But, I also love to make this recipe with my mom’s No Knead Bread, since it has a similar fluffiness and crispy crust when toasted.

Cottage Cheese
I started experimenting more with cottage cheese recipes when I discovered cottage cheese pancakes. It’s a fresh creamy cheese that adds an extra boost of proteins and minerals like calcium and selenium to any recipe. It’s slightly tangy, which balances out the richness of buttery avocado beautifully. I know cottage cheese isn’t everyone’s favorite, but trust me, cottage cheese with chili oil and honey somehow just works. It adds exactly the right contrast to the flavor combination.

Chili Oil and honey might be a surprising combination on top of avocado toast, but I promise you have to try this combo! The spicy-sweetness combined with the tart creaminess cheese, fluffy eggs, and rich avocado melts together in a single bite. Who knew a simple drizzle of honey could add so much complexity!
I’m using Mama’s Chili Oil from kai dong on top of my toast, which is my mom’s signature chili oil recipe. You can top your sandwiches with your favorite brand of chili oil or chili crisp, or make your own homemade chili oil to keep in the fridge.

How To Make Spicy Avocado Toast
- In a small bowl, whisk together 2 eggs, ¼ tsp salt, and chopped green onion (reserve some for garnish).
- In a nonstick skillet over medium heat, scramble the egg mixture for 2–4 minutes, or until soft and fluffy. Remove from heat.
- Toast 2 slices of bread until golden and crisp, about 2–3 minutes.
- Spread the smashed avocado (about ⅓ cup total) evenly onto each slice of toast.
- Add the scrambled eggs on top of the avocado. Spoon about 1.5 tablespoons of cottage cheese over each toast.
- Drizzle 1 teaspoon of honey and ½ to 1 teaspoon of chili oil over each slice.
- Sprinkle with the rest of the chopped green onion and serve your spicy cottage cheese avocado toast immediately.
