25 Minute Lunch Boxes with Protein, Carbs, and Veggies
Let’s pack a week of 25 minute lunch boxes together, from tasty steak and asparagus to Taiwanese Popcorn Chicken. I made it a goal this week for every lunch box to take less than 25 minutes. Also, every lunchbox has to have a veggie, a carb, and a protein for a truly balanced meal. These 5 lunchboxes are tasty, healthy, and so easy to reheat, especially using the kai dong microwavable stainless steel bento box!

A Week Of Husband’s Lunch Boxes Ep. 9
I’ve been packing lunch boxes for Dom for so many years, and I love every minute of it. But, honestly, who wants to spend all day in the kitchen on a weekday? So, I decided to pick a few easy lunchbox recipes that only take less than 25 minutes to make.
My goal for 2025 is to embrace a balanced approach to cooking, and all of these lunchboxes aren’t just tasty. Each of the bento boxes contain protein, carbs, and veggies to keep things super balanced.
Monday: Soy Glazed Chicken and Broccoli
If you’ve been here for a while, you know how much I love chicken. So today we’re making one of my go-tos, Taiwanese soy glazed chicken bento box. It’s the perfect balance between savory, garlicky, and just a little sweet. Since there’s no bones, the chicken thigh can cook super quickly. But, the fat from the chicken skin keeps it nice and juicy. Those chicken bites were seriously so so yummy. I had to some for my lunch too!
For the veggie, we’re keeping it super simple with some seasoned blanched broccoli mixed with sesame oil salt, sesame seeds, and garlic. It’s so easy. It just takes only 5 minutes. Just like that, a super flavorful, 25 minute bento box is ready to go.

- 5 chicken thigh boneless with the skin on
- 1 tablespoon garlic minced
- 3 tablespoons Soy Sauce
- 3.5 tablespoons oyster sauce
- 0.5 tablespoon dark soy sauce optional
- 1 pinch black pepper
- 1 can Coke 12 fl oz
- sesame seeds to garnish
- green onion to garnish

Tuesday: Steak and Asparagus
For Tuesday’s lunch box, we’re making Steak and Asparagus! I went to the grocery store this morning, and found these really really pretty asparagus. So, we’re making steak and asparagus for dinner and tomorrow’s lunchbox. I have some frozen steak in the fridge, so it’ll be really easy to put together. It’s a one pot bento meal that’s seriously packed with so much flavor, especially paired with my healthy multigrain purple rice. This was seriously one of my favorite lunch boxes for the week: savory, healthy, and super filling.

- 18-20 oz steak
- 30 stalks asparagus cut into 2 inch pieces
- 10-12 cloves garlic whole cloves
Beef Marinade
- 1.5 tbsp soy sauce
- 1 tbsp oyster sauce
- 2 tbsp corn starch
- 1 tsp black pepper
- 1 tsp baking soda
- 1 tbsp oil
Sauce
- 1/2 cup chicken stock
- 1/2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp sugar
- 1 tbsp corn starch

Wednesday: Mapo Tofu
If you’re looking to up your protein intake, this mapo tofu bento box recipe is for you. Before you say, “I don’t like tofu”, trust me, you have to give this recipe a try. This home-style mapo tofu recipe is a slightly lighter, less spicy version, so it’s the perfect school lunchbox for kids. You got a comforting, flavorful, and protein-packed lunch box ready in 20 minutes. Again, I paired it with my healthy multigrain purple rice for an extra bit of chew. The spicy mapo tofu sauce soaks into the rice, and makes each bite so savory! It’s easy to pack and reheat – and it’s one of my go-to lunchbox meals!

- 1 pack Firm/Traditional Tofu
- 1 cup Ground Lean Pork or chicken and shiitake mushroom
- ¼ cup Shiitake Mushrooms sliced
- 3 cloves Garlic chopped
- 1 Green Onion seperated whites and greens
- 1.5 tbsp Fermented Chilli Bean Paste
- 2 tsp Sugar
- 1.5 tbsp Soy Sauce
- 1-2 cup Chicken Stock or Water
- 1 tsp ground Sichuan peppercorn
- 1-3 tbsp Corn Starch

Thursday: Shrimp Yaki Udon
When I’m too tired to cook but still want something satisfying, Yaki Udon is the ultimate lazy lunch box meal. I always keep frozen udon and prawns on hand, so I can make lazy lunchbox recipes just like this! It’s an easy, one-pot lunch that’s super flavorful and tastes exactly the same after reheating. The secret is in the sauce — a simple mix of soy sauce, vegetarian oyster sauce, Worcestershire sauce, sugar, and black pepper. It’s tangy, savory, and just sweet enough to make any noodle stir-fry shine.
Today’s version uses prawns, cabbage, carrots, and shiitake mushrooms, but feel free to swap in whatever protein or veggies you have. This cozy and customizable noodle recipe is perfect for quick weeknight dinners, easy meal prep, or those weekly fridge clean-out.

- 2 packs Frozen Udon
- 1/3 cup Hot Pot Sliced Pork Belly Optional chicken, beef, shrimp or tofu
- 2 tbsp Soy Sauce
- 2 tbsp Oyster Sauce
- 3 tbsp Worcestershire Sauce
- 1 tbsp Sugar
- 1/2 Onion sliced
- 1 cup shredded Cabbage
- 1/2 Carrot sliced
- 6 Shiitake Mushroom sliced

Friday: Taiwanese Popcorn Chicken and Scallion Pancake
Today is actually Dom and I’s day off. So for our husband’s lunchbox today, I think I’m going to do a picnic outside since it’s so so beautiful right now. I’ve been really really missing Taiwanese food. So, I think for the bento, we’re going to do a traditional Taiwanese bento box plus green onion pancake. Just thinking about it is making me drool. And just like that, today’s lunchbox is ready. We got Taiwanese popcorn chicken, flaky green onion pancake, and refreshing cucumber salad on the side.

Homemade Green Onion Pancakes
Now, let’s talk about the star of the show, homemade green onion pancakes. This is actually a recipe that my mom worked on for months while we were recipe testing for my cookbook. It is flaky, it’s savory, and one of my all-time favorite Taiwanese dishes. The best part, you don’t need a mixer. You just need a bowl and your arms.
Because we’re making at home, you can add as much green onion as your heart desires. Quick tip, coat the chopped green onion with a little bit of oil to keep the vibrant color after cooking. My mom’s trick is to roll it out between two pieces of parchment paper. This will make it way less messy and super easy to freeze and store if you want to batch prep.

Taiwanese Fried Chicken
Okay, I hate to brag, but my Taiwanese popcorn chicken is low-key better than any takeout I have ever had. It is crispy, it’s juicy, it’s packed with so much flavor. Honestly, it’s so so addicting. Here is my secret: always use skin-on chicken thigh. I know it takes an extra five minutes to debone, but the flavor and texture is so worth it. Please tell me I’m not the only one who finds the sound of deep fried chicken super satisfying. Finished off with the savory seasoning, this Taiwanese popcorn chicken is so easy to pack into our lunchboxes.

- 6 Pieces Boneless Chicken Thigh with the skin on cut into 1-inch cubes
- 2.5 Tbsp Soy Sauce
- 3 Tbsp Chinese Cooking Wine optional
- 1 tbsp Minced Garlic
- 1 Tbsp Five-Spice Powder
- 1 Large Egg
- 3.5 Tbsp Rice Flour or corn starch
- 1.5 Cup Thai Basil
- 2 Cup Tapioca Starch

Garlic Cucumber Salad
Once the dough is smooth, let it rest while we work on our garlic cucumber salad. If you know, you know because there’s no Taiwanese lunchbox without a cucumber salad. Normally like to draw the water from the cucumber with salt and sugar, but if you’re eating it right away, just like we are, this is perfect as is.

- 2 English Cucumber
- 10 cloves Garlic chopped
- 4 tbsp Oil
- 2 tbsp Sugar
- 1 tsp Salt
- 3 tbsp Black Vinegar
- 1.5 tbsp Soy Sauce
- 1 tsp Sesame Seeds
- Cilantro

Hi, I have a question! How do you recommend storing these foods for the next day, if I want to cook them the night before?
Hi Maria, I usually cook the food the night before, pack the lunchbox, and store it in the fridge. If you’re taking it to work or school the next day, I’d take it straight out of the fridge into your lunch bag until you’re ready to reheat in the microwave!
