Korean BBQ Craving Satisfied In 20 Minutes

This week, I was so so hungry and really craving pork belly. Even though we don’t have a lot of time before we need to head out, it was enough time to enjoy this Korean BBQ Inspired dish. I like to name this as a delicious cross between my savory Korean marinated eggs and my go-to galbi marinade with crispy golden pork belly as the star. The pork belly is fried until crispy then cooked in a spicy-sweet glaze. It was the perfect way to satisfy my cravings in very little time.

Spicy Soy Glazed Pork Belly Ingredients

  • 1 lb thinly sliced pork belly cut into bite-sized pieces
  • salt and black pepper to taste

Spicy Soy Glaze

  • 1 onion grated
  • 3 tbsp soy sauce
  • 2 tbsp mirin or honey
  • 1 tbsp sesame oil
  • 1 green onion chopped (plus more for garnish)
  • 1-2 jalapeño sliced (optional for heat)
  • 1-2 Thai red chili sliced (optional for heat)
  • 1/2 tsp Black Pepper
  • 1 tsp sesame seeds plus more for garnish

Pork Belly Slices

Pork belly is the best cut for this dish because it has the right balance of meat and fat. The pork belly I’m using today are thin strips, which usually comes pre-packaged in the meat section at the supermarket. You can also get a big chunk of layered pork belly and cut them at home into thinner strips.

As it cooks, the fat slowly melts out, so you don’t need to add any oil to the pan. That fat gives the pork a crispy, golden edge and blends into the soy glaze, making the whole dish extra flavorful and perfect with rice.

Spicy Soy Honey Glaze

The spicy-savory sauce in this stir fry dish makes this pork recipe extra tasty with a bowl of rice. The secret to that rich umami sauce is actually freshly grated onion. This secret ingredient, inspired by my go-to Korean BBQ marinade, adds so much depth and flavor.

I mix the onion with with soy sauce, mirin, sesame oil, green onion, jalapeno, black pepper, honey, sesame seeds, and a little bit of Thai red chili for an extra kick. While cooking, the sauce thickens to a glaze that coats and sticks to the crispy pork belly.

How to Make Stir Fried Pork Belly

  1. Season 1 lb thinly sliced pork belly with salt and black pepper. 
  2. Heat a pan on medium-high and pan-fry pork belly until crispy and golden brown.
  3. In a small bowl, mix together 1 onion grated, 3 tbsp soy sauce, 2 tbsp mirin or honey, 1 tbsp sesame oil, 1 green onion, 1-2 jalapeño, 1-2 Thai red chili, and black pepper.
  4. Drizzle the sauce over the pork belly. Turn heat to high and sauté for 2 minutes until the pork is coated and glossy.
  5. Sprinkle with 1 tsp sesame seeds and extra green onion. Serve hot!

    what kinds of dishes would you also serve with this that would lean more into a Banchan style of meal?
    I was thinking like Kimchi, Sigeumchi Namul, pickled radish, or Cucumber Muchim

    1. Hi David, it’s a floral tasting leaf called perilla that’s really popular in Korean cuisine with Korean BBQ. You can find these at Asian grocery stores. If it’s not available in your area, I also sometimes use lettuce instead.
