Staycation Dinner with Fresh Local Ingredients
This year for my mom’s birthday, we planned a summer escape to the Sunshine Coast, spending the weekend at a cozy cabin right by the water in Sechelt. The beaches, the slower pace, and the fresh air made it the perfect spot to relax and enjoy some time together away from the city. We spent our time paddle boarding, cooking, and taste testing local restaurants around the Sunshine Coast.
My mom’s birthday dinner requests were simple: a cozy night in, homemade dinner, and all of us in our comfy clothes. I decided to make a classic oven roasted chicken, as well as broccolini side dish with lemon and Parmesan we found at the farmer’s market. It’s a big home-cooked meal, but only using the oven means all I have to do is prep and wait.
Grilled Broccolini Ingredients
- 450 g broccolini about 2 bunches
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup shredded parmesan cheese 20–25 g
- ½ lemon or 1 tbsp lemon juice

Brocollini
At the farmer’s market in Sechelt, we found some super fresh and tender broccolini to go with our Roast Chicken Dinner. Broccolini is a hybrid vegetable between broccoli and Chinese kale (芥藍). It has long, slender stalks and smaller florets, with a milder flavor than regular broccoli and a slightly sweet, peppery finish. This yummy vegetable is also high in vitamins A, C, and K, and also provides a good source of fiber, iron, and calcium. Unlike broccoli, the entire stalk is tender and edible, so you don’t need to peel or trim.

Lemon Parmesan Seasoning
Since the theme of tonight’s dinner is simple dishes, the broccolini is finished with just a sprinkle of parmesan and a squeeze of lemon. This keeps the seasoning light, adds a touch of savory flavor, and gives the dish a fresh brightness that works well alongside oven roasted chicken.
The seasoning step is a great time to get creative, so you don’t have to just stick to lemon and Parmesan. You can try making your own Gochujang butter or miso butter for a little more savory, rich flavor. Or, you can drizzle on soy sauce and a little Mama’s Chili Oil for an Asian twist.

How to Make Oven Roasted Broccolini
- Preheat the oven to 400°F (200°C).
- Place the broccolini in an oven-safe dish lined with parchment paper.
- Drizzle with olive oil, then season with salt and black pepper. Toss gently to coat.
- Roast in the oven for 10 minutes, until the stems are tender-crisp and the tops are just starting to brown.
- Remove from the oven and sprinkle with shredded parmesan. Squeeze over the juice of half a lemon before serving.
