The best part is – Spicy Korean Cucumber Salad only takes 10 minutes to prepare. Spicy Korean Cucumber Salad – Oi Muchim is super refreshing, and you can also prepare it ahead of time and store it in the fridge for up to 3 days! I have it as a side dish for breakfast, lunch, and dinner.

Refreshing Asian Salad

Spicy Korean Cucumber Salad is crunchy, savory, tangy, and highly addicting.

Just Oi Muchim and a bowl of rice are all I need for breakfast. I like to make my Spicy Korean Cucumber Salad in bulk; I also find that after you leave it overnight, the cucumber gets even more flavourful and delicious! 

Depending on your spice tolerance, you can adjust the amount of Korean Chili Paste to your liking.

Today I am making a mild version; if you want to add more heat, you can increase chili paste and chili pepper. Alternatively, for those who don’t like spicy food,  I also have a savory and refreshing cucumber salad that is kid-friendly. 

Spicy Korean Cucumber Salad (10 Minutes ONLY!)

I make side dishes such as Spicy Korean Cucumber Salad, Spinach Salad, Marinated Quail Eggs, and Taiwanese Cucumber Salad in bulk.

I always have many side dishes in the fridge ready to put together a healthy and satisfying meal that takes less than 5 minutes. If you like it spicy, you can also add a little bit of my homemade bibimbap sauce, which I always make in bulk.

Spicy Korean Cucumber Salad (10 Minutes ONLY!)

Ingredients 

  1. Prepare the Cucumber by cutting it in half diagonally and then cut into bite-sized pieces. 
  2. In a large bowl, mix Korean Chili Paste, Korean chili flakes, sesame oil, ground sesame seeds, sugar, minced garlic, and salt. 
  3. Add in sliced onions and chopped cucumber. Massage for 2-3 minutes until cucumber is coated in the paste. Taste to see if you need any more additional seasoning.
