This Easy Peanut Butter Chocolate Homemade Granola is my ultimate breakfast time-saver! This granola makes me incredibly excited for breakfast every morning. It is packed with nutrient-dense ingredients like oats, flax, and sunflower seeds that gives it both tons of healthy benefits and a satisfying crunch. This granola clusters up in deliciously crunchy maple peanut butter clumps. It‘s delicious with everything from yogurt to ice cream.

We’re already adding strawberries to this bowl, but to make it extra fruity, we’re adding some of my homemade strawberry jam. This jam is packed with vitamin C from both strawberries and lemon juice, great for boosting immunity and healthy skin. Plus, the strawberries add even more fiber and antioxidants. All this sour and tart flavors gets balanced out by the added honey. In a spoonful, there’s chunks of delicious strawberries that’s just the right amount of sweet and sour. It’s a perfect topping for this yogurt chia bowl, annd even for oatmeal, toast, or desserts like ice cream.

Coconut Chia Seed Pudding

Homemade Coconut Chia Seed Pudding saves me so much time in the morning! This high-protein coconut pudding is super easy, but requires no effort at all prepped in advance. Chia seeds are incredibly nutrient-dense – naturally high in fiber, protein, and omega-3 fatty acids and great for your gut.

Its creamy, bouncy texture that pairs perfectly with fresh fruit, granola, and yogurt. Besides yogurt bowls, it also makes a great addition to smoothies and overnight oats, adding a boost of texture and nutrition. For added flavor, you can mix in flavorings such as vanilla extract, cinnamon, honey or maple syrup while soaking the chia seeds.

How To Make Strawberry Chia Pudding Granola Bowl

  1. Stir the chia seeds and coconut milk together in a container that has a lid. 
  2. Let it sit for 5-10 minutes, then stir again to prevent clumping
  3. Cover and refrigerate for at least 2 hours or overnight until thickened.
  4. In a bowl, layer yogurt and chia pudding.
  5. On top, add strawberry jam.
  6. Add banana, strawberries, and a generous handful of granola.
  7. Drizzle with honey for a natural touch of sweetness.
