Make this bright, refreshing Pomegranate Apple Waldorf Salad with me! This yummy salad might be my favorite salad recipe, because it's crunchy, tart and deliciously fruity. I liked it so much, I made this salad 2 days in a row - for my 6 course Christmas Feast AND my Christmas Brunch! With homemade candied walnuts and lemon vinaigrette, this is a restaurant-quality salad you can impress your guests with at your next dinner party!
Add sugar and cinnamon into a medium sauce pan, letting the mixture melt over low heat without mixing.
Once the mixture is 50% melted, pick up the pot and swirl the contents for 30 seconds.
Once the sugar has fully dissolved, add in the walnuts and mix until evenly coated.
Pour over parchment paper and spread evenly to cool, being careful not to break the walnuts. Let cool.
Once cooled, break apart and set aside for use, or store in an air tight container for up to 1 week.
In a jar, mix olive oil, rice vinegar, mustard, lemon syrup, and black pepper.
In a large mixing bowl, add in spring mix and top with apple, pomegranate, shredded parmesan cheese, and candied walnuts.
Drizzle in the with lemon dressing
Optional: Top with fresh burrata and drizzle on honey and balsamic vinegar.
Notes
Don't worry about cleaning the sugar off your pot, because it's actually super easy! Boil some water in the pot, and the sugar will simply melt away and you can rinse it clean.
