Pomegranate Apple Waldorf Salad
Whenever you have a succulent main dish like the juicy prime rib I made for my 6 course Christmas meal, a salad like this Apple Waldorf Salad is a must-have side dish. The pomegranate seeds are really the star of this salad – giving you those nice pops of freshness in each bite. The candied walnuts and apples add such a great crunch and sweetness as well! Topped with fresh burrata and some balsamic-honey drizzle, this fruit salad was my way of adding some sweetness into our feast!

The Perfect Salad For A 6 Course Dinner Party
This Christmas Eve was the first one without my dad, and in his honor, I planned out this delectable 6 course prime rib meal as my way of sharing his love for food with my family. We’ve got the star – our herb-crusted Prime Rib, with creamy mashed potatoes, cheesy stuffed garlic bread, and a creamy shrimp pasta. All I needed was something colorful and fresh to balance out all these rich, creamy flavors, and this Apple Walnut Salad was the perfect addition. It’s sour, sweet, and crunchy, and so easy to make!
Make Your Own Candied Walnut Salad Topping
My favorite part of this salad was the homemade candied walnuts that may or may not have been a late night snack as well. The sugar hardens around the toasted walnuts to give this salad the extra crunchiness it needed. They’re so easy to make at home with only 3 ingredients, and they keep so well in an airtight container for a week. These candied walnuts crumbles delicately, so they make the perfect salad topping! I might even have to try them as an ice cream topping if I have any left over.
Don’t worry about cleaning the sugar off your pot, because it’s actually super easy! Boil some water in the pot, and the sugar will simply melt away and you can rinse it clean.

Easy Homemade Lemon Vinaigrette Salad Dressing
This Waldorf Salad uses a homemade easy lemon vinaigrette salad dressing. It’s an olive oil-based dressing with rice vinegar, mustard, black pepper, and of course, my lemon syrup. This sour, slightly spicy dressing really compliments the sweetness of the apple and walnuts. I made a ton of this Lemon Syrup to make drinks for my 22 person At Home Cafe Event, and I still have a lot in the fridge. It’s perfect for adding some sweetness AND sourness to my salad.

Waldorf Salad Ingredients
- 3-4 Cups Spring Mix
- 1 Red Apple cored and diced
- ½ Cup Pomegranate Seeds
- ¼ Cup Shredded Parmesan Cheese
- ½ Cup Candied Walnuts
- 1/2 Cup Lemon Vinaigrette
- fresh burrata Optional
Candied Walnuts
- ½ Cup Sugar
- 1 Tsp Cinnamon
- 2 Cups Walnuts
Lemon Vinaigrette
- ¼ Cup Olive Oil
- 1/4 Cup Rice Vinegar
- 1 tbsp Mustard
- 1 tsp Black Pepper
- 2 tbsp Lemon Syrup

How To Make Waldorf Salad
- Add sugar and cinnamon into a medium sauce pan, letting the mixture melt over low heat without mixing.
- Once the mixture is 50% melted, pick up the pot and swirl the contents for 30 seconds.
- Once the sugar has fully dissolved, add in the walnuts and mix until evenly coated.
- Pour over parchment paper and spread evenly to cool, being careful not to break the walnuts. Let cool.
- Once cooled, break apart and set aside for use, or store in an air tight container for up to 1 week.
- In a jar, mix olive oil, rice vinegar, mustard, lemon syrup, and black pepper.
- In a large mixing bowl, add in spring mix and top with apple, pomegranate, shredded parmesan cheese, and candied walnuts.
- Drizzle in the with lemon dressing
- Optional: Top with fresh burrata and drizzle on honey and balsamic vinegar.
