Let’s make the Viral Costco Chicken Rice Hack in the bag in 5 minutes! Before heading out for some hockey time this week, we need a super quick early dinner. Since my sister actually dropped off a Costco rotisserie chicken, I decided to test a chicken rice recipe I’ve seen online for a while! It was so easy and tasty looking, I had to try for myself. Surprisingly,, it was really good! Super fragrant, with a deliciously satisfying bite.
So, I figured we can make a quick early dinner together/n snack. I’ve been wanting to test a chicken rice recipe with the rotisserie chicken for a very long time. So, I figured we can recipe test together and see if it tastes good. Stormmy is literally walking around me right now because Costco chicken smells so good.

Ingredients For Scallion Rotisserie Chicken Rice
- 2 cups hot cooked rice
- 1½-2 cups shredded Costco rotisserie chicken or leftover chicken
- chicken juices from the rotisserie bag
- 2 green onions finely chopped
- 1 tbsp golden shallot oil
- 1.5 tbsp four season scallion sauce
- white pepper Optional
- sesame seeds Optional

Shredded Rotisserie Chicken
The star of this dish is, of course, Costco’s rotisserie chicken! A trip to Costco just isn’t complete without it. It’s delicious on its own but also AMAZING made into a different dish, like this easy chicken rice in a bag. My favorite part to use for this recipe is the chicken breast. Sometimes, breast meat in rotisserie chicken can be a bit dry. With all the sauces and the leftover chicken juices in the back, the meat stays moist and flavorful.
Of course, with this recipe you don’t always need Costco’s rotisserie chicken. This is a great way to use up some of your leftover chicken in general! All you have to do is shred it up, and mix it with rice, toppings, and your favorite kai dong sauces.

Chicken Scallion Sauce
This chicken rice gets all its flavor from the Chicken Scallion Sauce. The base of this sauce is all the delicious chicken fat and juices that collects on the bottom of your rotisserie chicken bag. For extra fragrance, we’re adding some kai dong Four Seasons Scallion Sauce, which adds a rich layer of savory-sweet scallion soy flavor. We are also adding the Golden Shallot Oil for an aromatic shallot flavor. They’re my go-to seasoning shortcut sauces anytime I need to make something in 5 minutes!

How To Make 5 Minute Chicken Rice
Let’s make the viral Costco scallion chicken rice in 5 minutes. Start with roasted chicken, shredded up, hot rice into the bag, shredded chicken, lots of scallion, four seasoned scallion sauce, and golden shallot oil for the extra umami taste. Now mix it all up and enjoy.
- Shred the cooked chicken into thin, bite-sized pieces using your hands or two forks.
- Add hot, freshly cooked rice to a bowl. Top with the shredded chicken and chopped scallions.
- Gently mix everything together so the rice absorbs the chicken juices.
- Drizzle in the Four Season Scallion Sauce and Golden Shallot Oil.
- Mix until evenly coated. Taste and adjust if needed. Optional: finish with a pinch of white pepper and sesame seeds, then enjoy.

When using leftover chicken and you don’t have the juices should you add a little chicken broth to it ?
Hi Eileen, Yes, chicken broth works well for as a replacement if you don’t have the juices. It will have a little less chicken fat left, so you can also add a little bit of sesame oil for extra aroma!
