Soft Tofu Scramble

The base of this recipe is a delicate tofu scramble, or translated from Mandarin, “egg hugging the tofu”. So, it’s not the type of scramble where everything’s mixed in. I’ve tried keeping the tofu in a block at the center, AND mixing it more into the egg. Both are delicious, and easy to experiment with! Soft tofu is best for this recipe because it’s the closest in texture to delicate eggs, so you get the best of both worlds. But, here are some common replacements for soft tofu:

  • Egg Tofu: A soft-tofu like egg custard that’s a common replacement for Soft Tofu for this recipe.
  • Firm Tofu: If you prefer a heartier bite with your tofu, this will also work.
  • Fried Soft Tofu: This is a block of soft tofu that has been fried, giving it an extra layer of “tofu skin” that softens and absorbs a lot of sauce. It’s often available in Asian supermarkets.

Spicy Garlic Sauce

I’m topping this egg and tofu with a Spicy Garlic Sauce that’s spicy, savory, and garlicky. Compared to the classic egg and tofu recipe, which uses a sweeter, thicker Gyudon-style sauce, this version has a light soy-based sauce packed with a ton of chilis. It gets absorbed into the egg in the last few minutes of cooking, and adds a TON of spicy flavor to the egg and tofu base. The sauce is so simple, made with garlic, soy sauce, mirin, sesame oil, Korean red chili flakes, and optionally, some finely chopped chili for extra heat. Of course, you can adjust the spice level to your liking! If the sauce is a little too thick, you can loosen it with about 1 tablespoon of water.

How To Make Spicy Garlic Eggs with Tofu

  1. Prepare the eggs and sauce. Beat the eggs with salt and black pepper. In a separate bowl, mix all the sauce ingredients.
  2. Add the tofu and eggs. Heat the neutral oil in a small nonstick skillet over medium heat. Gently slide in the drained tofu and pour the eggs around it.
  3. Gently break up the tofu. Use chopsticks to divide the tofu into large chunks, keeping them mostly intact. Gently stir the eggs around the tofu as they begin to set.
  4. Add the sauce. Once the eggs are about 60% set but still wet on top, spoon the sauce over the tofu and eggs. Cover and cook for 1–2 minutes, or until the tofu is heated through and the eggs reach your desired doneness.
  5. Garnish and serve. Finish with green onions and toasted sesame seeds. Serve immediately with hot rice, spooning the spicy garlic sauce over everything!
