1-2green onionssliced
Toasted sesame seedsfor garnish
Cooked ricefor serving
Instructions
Prepare the eggs and sauce: Beat the eggs with salt and black pepper. In a separate bowl, mix all the sauce ingredients.
Add the tofu and eggs: Heat the neutral oil in a small nonstick skillet over medium heat. Gently slide in the drained tofu and pour the eggs around it.
Gently break up the tofu: Use chopsticks to divide the tofu into large chunks, keeping them mostly intact. Gently stir the eggs around the tofu as they begin to set. You can decide how “mixed together” the tofu and eggs are.
Add the sauce: Once the eggs are about 60% set but still wet on top, spoon the sauce over the tofu and eggs. Cover and cook for 1–2 minutes, or until the tofu is heated through and the eggs reach your desired doneness.
Garnish and serve: Finish with green onions and toasted sesame seeds. Serve immediately with hot rice, spooning the spicy garlic sauce over everything!
