Healthy Banana Muffins For Marathon Week
This week is marathon week, and I’m making foods that are both made with healthy ingredients and gives me that long-lasting energy to help be last through a full half marathon. One of my favorite recipes of the week is this Banana Chocolate Chip Muffin! I’ve been eating one of these before and after my long runs while training for my half marathon and they give me the best energy boost!
I genuinely think that banana muffins might be better than banana bread. Dom and I legit finished an entire batch in just a few days. They were that good! The best part? My mom helped me test this muffin recipe so it’s completely fail-proof even if you’re new to baking!
Banana Muffin Ingredients
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup butter melted
- 1/3 cup sugar
- 1/3 cup brown sugar
- 1 cup mashed banana about 2-3 bananas
- 2 eggs
- 1/4 cup Greek yogurt
- 2 tsp vanilla extract
- 1 cup chocolate chips
Topping
- chocolate chips
- Flaky Sea Salt

How Ripe Should Your Bananas Be?
This muffin is great for a fridge cleaning day like today. I have some ripening banana that are ready to be turn into some muffins, so after lunch I decided to make something sweet.
The secret is using super ripe bananas. In fact, the darker the better. I know they don’t look great to eat on their own, but they’re actually the best for muffins and cakes. These riper fruits have a higher sugar content for natural sweetness and a much deeper banana flavor.

Greek Yogurt Muffin Batter
These muffins are soft, bouncy and super moist thanks to a little bit of Greek yogurt magic. Its higher protein and fat content helps lock in moisture while giving the crumb a tender, rich flavor.
The Greek yogurt in the batter actually helps them freeze and reheat better too. The added proteins keeps the muffins soft, not crumbly, even after thawing. These muffins freeze for up to 3 months in a freezer bag. Reheat straight from frozen in the microwave for 25–30 seconds, or toast in toaster oven for a just-baked texture.

Chocolate Chips and Other Add-ins
These banana muffins are mixed in with chocolate chips for a little extra decadence, and topped with more chips and a pinch of flaky Maldon salt. The chocolate can get a little too sweet on its own depending on the brand. Here, the salt comes in to balance everything out and enhance the natural sweetness of bananas.
You can also add chopped walnuts, pecans, or your favorite nuts if you want some crunch and toasted, nutty flavor. If you prefer, you can also switch out the type of chocolate chip for a sweeter white chocolate banana muffin, or use a bittersweet dark chocolate. For a more tropical combo, shredded coconut also pairs well with bananas.

How To Make Banana Muffins
- Preheat the oven to 425°F (220°C).
- In a small bowl, mash the bananas until smooth.
- In a separate large mixing bowl, combine the melted butter, granulated sugar, brown sugar, 1 cup of mashed banana, eggs, Greek yogurt, and vanilla extract. Mix until well combined.
- In another bowl, whisk together the flour, baking powder, and salt. Sift the dry mixture into the bowl of wet ingredients and stir until just combined.
- Add the chocolate chips and fold gently until evenly distributed.
- Line only the wells you’re using with parchment paper liners. Spoon about ¼ cup of batter into each lined well. If you have any empty wells, leave them unlined and fill them halfway with water.
- Top each muffin with a few extra chocolate chips and a light sprinkle of flaky salt.
- Bake at 425°F (220°C) for 10 minutes. Without opening the oven door, reduce the temperature to 350°F (175°C) and continue baking for 15 to 20 minutes

Baking Your Muffins
In the oven, these muffins go through 2 stages of temperatures: first a higher bake at 425°F (220°C), and then another 15-20 minutes at 350°F (175°C). These two stages are important for a perfectly baked muffin. The first high temperature stage makes sure that the muffin fully rises for that light, fluffiness. Then, the lower temperature cooks it through inside.
Since this recipe only makes 10 muffins, you should have 2 empty wells in your muffin tin. While baking, make sure to fill these wells halfway with water. This helps the muffins bake evenly in the rest of the wells and prevents the pan from warping.

Definitely fail-proof! I gave up on baking in my late teens and focused on my cooking skills instead. Baking was too much of a science for me and I did not posess the patience for it like I did and still do with cooking. I’m 35 now and decided to make these because I have kids who love bananas and my husband and I still enjoy a baked treat. I used two rounded cake pans. One lined with parchment paper for the recipe and the second filled halfway with water. My whole family enjoyed this recipe and I told them I’d make it every two months 🙂
