Easy Green Sauce with Rice Bowl For Lunch

It’s Dom’s birthday this week. In between all the dinner party preps and celebrations, I’m looking for ways to still keep myself energized with balanced, nutritious meals that are super quick to make. To increase my fiber intake, I’ve also been obsessed with adding extra veggies into my recipes.

This sauce is herby, garicky, and just the right amount of spicy. Drizzled over my Healthy Shrimp Rice Bowl, it adds just the right amount of creamy contrast to make it an extra satisfying bowl. I would add this creamy green sauce to rice bowls, salads, even as a dip for chips and crudite!

Herb Yogurt Green Sauce Ingredients

  • 1.5 cup Greek Yogurt
  • 1 handful parsley
  • 1-2 bunch Mint
  • 1/2 Bunch tarragon
  • 1 Bunch dill
  • 1 Bunch chives
  • 1 jalapeno
  • 1 lemon zest and juice
  • 1 avocado
  • 6 cloves garlic
  • 4 tbsp olive oil
  • salt to taste
  • Black Pepper to taste

Greek Yogurt Base

Every time I crack open a new tub of Greek yogurt, I always make a big batch of this creamy herb yogurt sauce. I blend together Greek yogurt and avocado for an extra creamy, thick base. The tartness of yogurt and lemon juice makes it super refreshing too!

If you’re looking for a truly vegan alternative, try using coconut yogurt or silken tofu instead of Greek Yogurt!

Fresh Herbs

The most important part of this creamy green sauce that gives it that well rounded flavor are the medley of fresh herbs and aromatics we add in. For the full recipe we are adding parsley, mint, terragon, dill, chives, jalapeno, and garlic.

However, sometimes the herbs I add can vary depending on the flavor I’m looking for. For example, if you’re not a fan of spicy, you can always skip the jalapeno. Sometimes, I only add a bunch of parsley or cilantro instead of using all the different herbs, because it makes things easier.

How To Make Creamy Green Sauce

All you need to do for this creamy sauce is combine the ingredients and blend everything together until smooth and creamy. I sometimes like to play with the texture and blend it to be a little chunkier.

  1. In a blender, combine Greek yogurt, parsley, mint, tarragon, dill, chives, jalapeño, garlic, avocado, lemon zest and juice, olive oil, salt, and black pepper.
  2. Blend until the mixture is completely smooth and creamy.
  3. Serve as a dip, salad dressing, or drizzled over a rice bowl.

What To Eat with Creamy Green Sauce

I can eat this sauce with pretty much anything! This sauce is a particular hit with fattier proteins or fried foods. It adds that creamy, tart flavor Into your dish, without adding as much heaviness. I especially love dipping my freshly fried Taiwanese Fried Wings into this sauce, or drizzling it over my Shrimp Veggie Rice Bowl.

I also really like it paired with lighter ingredients, especially vegetables, salads, and grain bowls. It adds that bit of creamy richness that helps balance out all the watery or crisp textures. So, it’s also great as a TV snack dip with chips or veggies.
