Believe it or not, there was a time in my life where I was constantly thinking about what to have for lunch when I was working my corporate job.
Between juggling client meetings and trying to hit quotas, it was hard to find time to meal plan and bring my own lunches! I found myself constantly ordering UberEats to the office or grabbing something quick in a drive-thru while I was on the road.
Luckily, because cooking has always been a passion and hobby of mine, I decided that it was time for me to start being proactive with my meal planning!
These recipes are so EASY and VERSATILE. You can either make some extra to pack up when cooking dinner the night before, or make them specifically for packed lunch within 30 minutes or less!
