HIGHLY REQUEST RECIPE – Keto-friendly General Tso Chicken with the best sweet and savory glaze.
General Tso Chicken is a takeout classic of crispy chicken covered with sweet, flavorful, and slightly spicy glaze AND make it SUGAR-FREE. You never cooked with sugar alternatives? Well, don’t worry, I got you! Even without sugar, we can make a finger-licking-good glaze that tastes just as amazing!
General Tso Chicken is one of the go-to guilty pleasure dishes that I always order when getting Chinese Takeout.
I love to pair it with a side of egg fried rice, and it will hit the spot every single time. I love cooking with sugar and starches. However, I know that many people are trying to cut down on sugar and calories, so I thought I’d share a healthy alternative that tastes just as good!
I am using Monkfruit Sweetener today because it cooks the best for Asian dishes since it is heat stable, so it’s perfect for stirfry and glazes.
Like most sweeteners, it is ALOT sweeter compare to sugar (around 200x), so you don’t need alot to achieve the flavor. Even though I am not Keto myself personally, I love to find healthier alternatives to make delicious restaurant-style quality food at home.
Now let’s talk about making crispy chicken that’s keto-friendly and still juicy on the inside. My two secret ingredients are baking soda and baking powder.
Baking soda helps tenderize the meat, while baking powder helps the chicken to be extra crispy. I am using EXTRA fine Almond flour today, but you can also use Psyllium Husk or pork rind. I will be frank; these alternatives are never going to be as good as corn starch. If you are just trying to cut out sugar but you are not full Keto, I recommend coating the chicken with corn starch or rice flour to fry but using monk fruit sweetener to cut out the sugar for the glaze. This method will still reduce calories by a significant amount.

Ingredients
1.5 lb of Boneless Chicken Thighs (bite-sized pieces)
4 cloves of Garlic (grated)
1 tbsp of Ginger (grated)
2 tbsp of Soy Sauce
1 Egg
.5 tsp of Baking Soda
2 cups of Superfine Almond Flour
1 tsp of Salt
1 tsp of Baking Powder
5 cloves of Garlic (minced)
3 stalks of Green Onion (chopped)
5-8 Dried Red Whole Chili
1 inch of ginger (thinly sliced)
4 tbsp of Soy Sauce
2 tbsp of Rice Vinegar or Apple Cider Vinegar
1.5 tbsp of Monkfruit Sweetener
.5 tbsp of Sesame Seeds
- In a bowl, marinate boneless chicken thighs, 4 cloves of grated garlic, 1 tbsp of grated ginger, 2 tbsp of soy sauce, 1 egg, and .5 tsp baking soda. Mix well and let it rest for 20-30 minutes
- After 20-30 minutes, coat the chicken with a mixture of super fine almond flour, 1 tsp of salt, and 1 tsp of baking powder.
- Fry the chicken for 3-4 minutes or until it, gets crispy and golden brown.
- In a pan, turn the heat up to medium-high and add 1 tbsp of oil and pan-fry 5 cloves of minced garlic, white parts of the green onion, thinly sliced ginger, and 5-8 chili for 1-2 minutes or until fragrant.
- Pour in soy sauce, rice vinegar, and 1.5 tbsp of monk fruit sweetener and let it simmer until it becomes a glaze.
- Add in the fried chicken and toss until all the chicken is coated in the sauce. Finish off with sesame seeds and remaining green onion
