Pat the salmon dry and season with salt and pepper. Dust 2.5 tbsp of flour all over the salmon, and shake off any excess flour.
Mix soy sauce, sake, mirin, sugar, and dashi powder.
In a pan, add in oil, turn the heat to medium-high.
Once the pan is hot, place the salmon and the skin side facing down. Pan-fry the salmon for 3-4 minutes on each side. Remove and set aside.
Using the same pan, drizzle in the sauce, and simmer for 1 minute.
Add the salmon skin-side down and let it cook for another 2-3 minutes. Drizzle the sauce over the salmon.
