Let’s make a super easy Spam Musubi Egg Rice Bowl that has all the nutrients you need in one bowl. I’ve been missing the Spam Musubis in Hawaii, so I’ve decided to make in into an easy rice bowl. In under 15 Minutes, you can have soft scrambled egg, sweet-savory glazed spam bites, and crunchy cucumbers over steaming hot furikake rice. This is a super easy rice bowl that works for breakfast, lunch, or dinner that reminds me of Honolulu beaches.
In a bowl, whisk together the eggs, salt, and a pinch of black pepper until combined.
Heat the oil in a large pan over medium heat. Pour in the egg mixture and gently soft scramble for 2-3 minutes, or until slightly set but still fluffy. Set aside.
In the same pan, add the Spam cubes and sauté over medium-high heat for 3-4 minutes, until the edges are lightly browned.
Add the soy sauce, mirin, black pepper (for the sauce), and sugar. Sauté for 1-2 minutes, stirring frequently, until the sauce starts to reduce and glaze the Spam.
Serve over hot rice with sliced cucumbers, scrambled eggs, and furikake. Optional: enjoy with crispy sheets of seaweed for wrapping everything together in one bite.
