Hawaii-Inspired Spam Musubi Egg Rice Bowl

It’s carb loading time for my first full marathon, the Vancouver Marathon. I know this may sound weird but running has completely changed the way I view food. One of the fastest half marathons I have ever ran was in Hawaii. I’m fully convinced it was because all the delicious food we ate before race day. I was literally having poke bowls, musubis and rice bowls every single day.

Today I figure why not combine them together! So for lunch, because we just got back from Hawaii, I’m really craving a Spam Musubi Egg Rice Bowl. This recipe is super, super easy and takes less than 15 minutes! Trust me, the smell alone will make you so, so happy. It’s definitely a new household favorite, because I’ve made this some any times since!

Musubi Egg Rice Bowl Ingredients

  • 1 can Spam 340g / 12 oz, cubed
  • 3 eggs
  • ¼ tsp salt
  • ¼ tsp black pepper divided
  • 1 tbsp neutral oil

Musubi Sauce

To Serve

  • 2 cucumbers sliced
  • 3 cups cooked rice About 2 servings
  • 2 tbsp furikake
  • Crispy seaweed for serving

Cooking with Spam

I haven’t always been the biggest fan of spam. But after a few Hawaii beach-side Spam Musubis, I’ve completely changed my mind. Spam became a staple in Hawaii during and after World War II, when wartime supply shortages and military provisions made canned meats much more common. It’s affordable, but also packed with a lot of flavor. 

Before the glaze goes in, I like to pan fry the Spam until the edges crisp up. It makes a huge difference in both the texture and flavor! It’s the tastiest bite to enjoy with a big bite of hot rice.

Musubi Sauce

One of the best parts of a spam musubi is that sticky musubi sauce glazed over the spam. It’s glossy, slightly sweet, and the perfect contrast to the savory spam. Before making the glaze, we brown and render fat from the spam cubes to get them nice and crispy. Then we add the soy sauce, mirin, black pepper (for the sauce), and sugar to cook with the spam. The rendered fat helps the sauce cling to the meat, and the sugar and mirin quickly caramelize into a thin, sticky glaze. It’s so good with rice!

How To Make Easy Spam Musubi Egg Rice

  1. In a bowl, whisk together the eggs, salt, and a pinch of black pepper until combined.
  2. Heat the oil in a large pan over medium heat. Pour in the egg mixture and gently soft scramble for 2-3 minutes, or until slightly set but still fluffy. Set aside.
  3. In the same pan, add the Spam cubes and sauté over medium-high heat for 3-4 minutes, until the edges are lightly browned.
  4. Add the soy sauce, mirin, black pepper (for the sauce), and sugar. Sauté for 1-2 minutes, stirring frequently, until the sauce starts to reduce and glaze the Spam.
  5. Serve over hot rice with sliced cucumbers, scrambled eggs, and furikake. Optional: enjoy with crispy sheets of seaweed for wrapping everything together in one bite.

Pro Tip To Enjoy Your Spam Musubi Rice

I love serving my Spam Musubi Egg Rice with sheets of crispy seaweed! I highly, highly recommend it. To make the perfect bite, take a sheet of crispy seaweed. On top, add some hot rice, spam, cucumber, and a little bit of egg. Wrap it all up, and enjoy!
