The umami flavor of the oyster sauce and soy sauce pairs perfectly with the refreshing lemon and parsley.

Cooked pasta to al dente based on boxed instruction; reserve ¼ - ½ cup of pasta water on the side. In the meantime, prepare the ingredients.
Add 2 tablespoons of olive oil to a pan, and turn the heat to medium-high. Once the oil is hot, add the sliced shallots, and saute for 2-3 minutes or until fragrant.
Next, add garlic and red chili flakes, and saute for 1-2 minutes or until fragrant.
Add vegetarian oyster sauce, soy sauce, and a pinch of sugar. Mix well
Finally, add the pasta, and pasta water, turn the heat to high and saute for 1-2 minutes.
To finish, add lemon juice and parsley, and saute on high heat for 1 minute.

If you add protein, pan-fry it first, remove it, and set it aside. Continue the recipe as below, and when the step of adding in pasta, add back in the protein and mix everything.
