This easy Taiwanese Scallion Pancake Beef Roll is an tasty reminder of Taiwan's breakfast foods! This beef roll recipe is made of two iconic Taiwanese dishes: Taiwanese Green Onion Pancake and Braised Beef Shank. Fragrant beef paired with crunchy cucumber and sweet sauce, wrapped in an oniony, chewy pancake. It's a tasty wrap that many of us have had as breakfast, lunch, or snack in Taiwan.

Reheat or pan fry green onion pancake on both sides for 3-4 minutes or until golden brown. If you're using frozen green onion pancakes, follow package instructions.
Cut the halved cucumber into long pieces.
Cover 1 side of each green onion pancake with about 1 tbsp each of Sweet Bean Sauce.
Layer sliced beef shank, green onions, and cucumbers on one half of the green onion pancake.
Starting from the side with all the ingredients, start rolling the green onion pancake tightly into a wrap.
Insert skewers at both ends to keep the roll intact while cutting it into multiple pieces.
Remove skewers and serve.

For the green onion pancake, you can find them from the frozen section at any Asian grocery stores. If you'd like to make your own, try my easy recipe for Taiwanese Scallion Pancakes at home! You can often find Taiwanese braised beef shank ready made in the deli section of Asian supermarkets. If not, I also have a recipe for it!
