This toasty Italian Cold Cut Sandwich is the easiest pre-run lunch: simple to make, super fresh, and packed with everything I want mid-day like carbs, meat, veggies, and tons of flavor. It has the creamy richness of fresh mozzarella with the savory mix three kinds of charcuterie, juicy tomatoes, and tart balsamic arugula and pickled carrots. This sandwich has the perfect crunchy, tangy bite to balance it all out.
1/2French baguetteor sub roll, about 6 inches, sliced lengthwise
1½cupsarugula
2tspolive oil
1tbspbalsamic glaze
1tbspDijon mustardSpicy
Salt and black pepperto taste
1tomatosliced
2slicesprosciutto
2slicessmoked ham
2slicessoppressata
3-4slicesfresh mozzarella
¼cuppickled carrots
Instructions
Toss your 1½ cups arugula with 2 tsp olive oil and 1 tbsp balsamic glaze. Set aside.
Slice 1/2 French baguette in lengthwise, and toast until golden and crispy on the edges.
Spread a generous layer of 1 tbsp Dijon mustard on the bottom half of the bread. Top with 1 tomato slices and season with a bit of Salt and black pepper.
Layer on the 2 slices prosciutto, 2 slices smoked ham, 2 slices soppressata, and chunks of 3-4 slices fresh mozzarella on top
Add a layer of ¼ cup pickled carrots and balsamic arugula.
Close the sandwich with the top half of the bread, press down gently, and slice in half.
