Light Friday Lunch with Italian Deli Sandwich

Before a longer 16K run today, I am refueling my body with this yummy Italian-style sub sandwich. I’ve been more intentional when it comes to the healthy foods I’m eating. Now, since I’m cooking for both marathon training and hormone balancing seed cycling, I’m finally feeling more in tune with my body than ever.

This sandwich is so filling and hearty, but not heavy. In my opinion, it’s the perfect balance for a runner. It’s great on the go and holds up well in a lunchbox. Layers of deli meat, tomatoes, fresh mozzarella, cheese and arugula packed in between toasty baguette halves is the perfect mix of fresh and satisfying. I cannot get over how good this sandwich looks!

  • 1/2 French baguette or sub roll, about 6 inches, sliced lengthwise

The toastiest sandwiches need the toastiest breads, so today I’m choosing a crispy French baguette that’s just the right amount of softness inside. I sliced it lengthwise, and toasted it so it’s crispy on all sides.

If you’d like to choose another type of bread, look for something that Is crusty, but light and airy inside. It should also be sturdy enough to hold all the ingredients without falling apart. The best kinds would be a rustic Italian loaf, ciabatta, or a sourdough.

Add Veggies with Balsamic Arugula Salad and Pickles

The toppings for this Italian sandwich can definitely change depending on what you’ve got in the fridge. Today, I had some leftover fresh arugula and a jar of pickled carrots I made earlier this week. The arugula adds that fresh, peppery bite that cuts through all the rich, salty meats, and the pickled carrots bring a crunchy, tangy contrast that keeps things from feeling too heavy.

If you don’t have those on hand, baby spinach, shredded cabbage, or even a handful of mixed greens would do the trick. Anything crisp, fresh, or pickled helps balance the richness and gives the sandwich a little more texture.

I picked up the prosciutto, smoked ham, and soppressata straight from the deli at Bosa Foods. They’re my go-to charcuterie trio when I want something that feels a little extra but still easy. The mix gives that layered, salty-sweet richness you only get when you combine a few different cured meats. Together, they balance each other out without overpowering the other ingredients, and they make the sandwich feel a little more special than your usual lunch meat stack.

How to Build Your Cold Cut Sandwich

  1. Toss your 1½ cups arugula with 2 tsp olive oil and 1 tbsp balsamic glaze. Set aside.
  2. Slice 1/2 French baguette in lengthwise, and toast until golden and crispy on the edges.
  3. Spread a generous layer of 1 tbsp Dijon mustard on the bottom half of the bread. Top with 1 tomatoslices and season with a bit of Salt and black pepper.
  4. Layer on the 2 slices prosciutto2 slices smoked ham2 slices soppressata, and chunks of 3-4 slices fresh mozzarella on top
  5. Add a layer of ¼ cup pickled carrots and balsamic arugula.
  6. Close the sandwich with the top half of the bread, press down gently, and slice in half.
