Vibrant Salad with 1 Minute Honey Mustard Vinaigrette

Make this super easy vibrant salad with my 1-minute Honey Mustard Vinaigrette. It's so easy to whip up, I made it as part of my menu for my family's Christmas Brunch this year. This is a honey dijon vinaigrette dressing you can make with any vegetable combo in only 1 minute. Sweet, Tangy, and just the right amount of heat, this fully-vegetarian dressing makes any salad fun.
Ingredients
- 1 tomato
- 1 red onion
- 1 sweet pepper
- 1 cucumber
- 1-2 sprig of fresh dill
- 4 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1.5 tablespoon honey adjust for sweetness if desired
- ¼ teaspoon freshly ground black pepper adjust to taste
Instructions
- In a small bowl or jar, combine the red wine vinegar, Dijon mustard, and honey. Whisk or shake until smooth.
- Slowly drizzle in the olive oil while whisking continuously to emulsify the mixture.
- Add freshly ground black pepper and salt, whisk again to combine.
- Taste and adjust the sweetness or seasoning if needed.
- Cut onion, tomato, pepper, and cucumber into bite-sized chunks and add to a large mixing bowl.
- Chop the fresh dill and sprinkle over the vegetables.
- Drizzle salad dressing over vegetables, and mix to combine.
Notes
Serve salad dressing immediately or store in an airtight container in the fridge for up to a week. Whisk or shake before using.
