This Buldak-Style Spicy Chicken Noodles is a low-effort, high reward meal that comes together in just under 30 minutes. It’s just like the viral Spicy Noodle Challenge, but with a more chill level of heat. Imagine spicy-sweet, juicy chunks of chicken paired with bouncy noodles and finished off with lots of melty shredded cheese. It’s the perfect combo for a gloomy day lunch to cheer me up!
Start by marinating the chicken thighs with Korean red chili flakes, lots of garlic, black pepper, Korean red chili paste, soy sauce, and any sweetener you love. Massage everything in really well.
In a separate pot of boiling water, cook the noodles until loosened and slightly undercooked. Set aside.
Then pan fry the chicken for around 2-3 minutes on each side. You want that beautiful brown exterior while keeping the inside super juicy.
Once the chicken is around 70% cooked, cut the chicken into bite-sized pieces.
Push the chicken bites to the side of the pan, and add in sliced onions. Toss in any veggie you have on hand. Today, I'm adding in lots of mushrooms.
Add in cooked noodles and mix everything together so it soaks up all that spicy savory goodness.
Finish off with a generous handful of shredded cheese. Let it melt.
