Korean Buldak Spicy Chicken Instant Ramen

Today we’re making Korean Spicy Chicken Ramyeon inspired by the viral Buldak noodles. But, we’re making the sauce from scratch, and making it a full meal with real chicken and tons of cheese. The veggies and noodles soak up all that spicy chicken juices in the pan. Plus, there’s the amazing cheese pull. This combo pairs so perfectly together! It makes the house smell so good, I can’t wait to dig in!

Today is such a gloomy day, so I’m really craving something spicy and cheesy. This is that perfectly savory and super quick lunch you can make anytime.Honestly, just thinking about spicy food on a chilly day already feels like a win. It just warms me right up.

Spicy Chicken Ramen Ingredients

  • 5 Boneless Chicken Thigh
  • 1.5 tbsp Gochugaru
  • 2.5 tbsp minced garlic
  • 1/2 tsp black pepper
  • 1 tbsp gochujang
  • 2 tbsp Soy Sauce
  • 1 tbsp Sweetener of Your Choice I used honey
  • Neutral oil for frying
  • 1 onion sliced
  • 150 g mixed mushrooms sliced
  • 2 packs noodles
  • 1/2 – 1 cup shredded cheese

Gochujang Garlic Chicken

This chicken noodle uses boneless chicken thighs, which is an easy protein option anytime. The first step of this recipe is to marinade the chicken in that spicy, garlicky gochujang-based sauce. This sauce is made with gochugaru, minced garlic, black pepper, gochujang, soy sauce, and some honey as sweetener for balance. This gives it that same spicy-sweet chicken flavor as the Buldak noodles, but the spice level is much less of a challenge. Of course, if you’re up for the challenge, you can definitely add even more gochujang and Gochugaru!

After frying the chicken and cutting it into bite-sized pieces, you move the chicken bites to the edges of the pan to cook the veggies. This is a key step, because you want the onions and other veggies soaking up all that delicious chicken juices.

Ramyeon Noodles

I’m using chewy, curly Korean Instant Ramyeon noodles today to replicate that classic Buldak noodle chew. These noodles are great at soaking up all that spicy sauce, and can be stir fried without getting soggy or break apart. For the closest match, I’d suggest Samyeon Ramyeon noodles, Nongshim Shin Ramyun, or Ottogi Jin Ramen. However, if you don’t’ have any Korean instant noodles, try fresh ramen noodles, udon, or even pasta. These can definitely withstand the same amount of stir frying in this recipe.

Instructions

  1. Start by marinating the chicken thighs with Korean red chili flakes, lots of garlic, black pepper, Korean red chili paste, soy sauce, and any sweetener you love. Massage everything in really well.
  2. In a separate pot of boiling water, cook the noodles until loosened and slightly undercooked. Set aside.
  3. Then pan fry the chicken in neutral oil for around 2-3 minutes on each side. You want that beautiful brown exterior while keeping the inside super juicy.
  4. Once the chicken is around 70% cooked, cut the chicken into bite-sized pieces.
  5. Push the chicken bites to the side of the pan, and add in sliced onion. Toss in any veggie you have on hand. Today, I’m adding in lots of mushrooms.
  6. Add in noodles and mix everything together so it soaks up all that spicy savory goodness.
  7. Finish off with a generous handful of shredded cheese. Let it melt.
