Making My Husband Sausage Stir Fry Lunch Boxes

Back by popular demand, I’ve made a week of my husband’s lunchboxes this week! Even though we are mostly work from home now, we still love meal prepping ahead for the next day. These lunchboxes help us enjoy great lunches while still focused on work.

Today’s lunchbox is Korean Inspired Spicy Mini Sausage Stir-Fry served with white rice. Since I’m a bit tired today, I want to make a lunchbox that doesn’t take so much work. Whenever I don’t feel like cooking, I always make a quick stir fry. It comes together in less than 20 minutes, and is packed with tons of flavor.

What is Sausage Yachae Bokkeum?

Sausage Yachae Bokkeum 소세지 야채볶음 or 쏘야 is the Korean dish that inspired our sausage and rice lunchbox today. Typically enjoyed with steamed rice as a banchan or in lunchboxes, this dish has mini Vienna sausages and a ton of vegetables, like onions, carrots, and bell peppers. It sweet, tangy, savory, a little spicy, and super popular with kids and adults alike. It’s everything from a yummy side dish to a popular drinking snack.

Spicy Sausage Stir-Fry Ingredients

  • 8-10 mini sausages cut small slits on each
  • 1 onion sliced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 small carrot julienned (or any veggie of choice: broccoli, zucchini, etc.)
  • 1 tsp sesame seeds for garnish

Sausage Yachae Bokkeum Sauce

  • 1 tbsp Korean Red Chili Paste Gochujang
  • 1 tbsp ketchup
  • 0.5 tbsp soy sauce
  • 1 tbsp honey or any sweetener
  • 1 tsp black pepper adjust to your own spice level
  • 1 tbsp water to thin out if needed

Sweet and Spicy Sausage Yachae Bokkeum Sauce

What really makes this dish so iconic is the spicy, tomatoey sweetness of the Sausage Yachae Bokkeum Sauce. It is a blend of Korean Red Chili Pasteketchup, soy saucehoney, and black pepper that has just the right balance of heat and sweet. The sauce should be the perfect consistency to coat all the ingredients in a layer of flavor. If the sauce is too thick, you can add a little water to thin it out.

This sauce is so magical, you can combine it with any vegetables and protein in your fridge. It will turn out tasty every singl. time.

Step By Step Guide To Sausage Stir Fry

  1. Prepare the Sauce: In a small bowl, mix gochujang, ketchup, soy sauce, honey, black pepper, and a little water if needed. Set aside.
  2. Sauté the Sausages: Heat a pan over medium heat. Add the mini sausages and sauté for 2-3 minutes until slightly browned and curled up.
  3. Stir-Fry the Onion: Add the sliced onion and cook for 1 minute until fragrant.
  4. Cook the Vegetables: Add the bell peppers and carrots (or your choice of veggies). Stir-fry for another 2-3 minutes until slightly softened but still crisp.
  5. Add the Sauce: Drizzle the prepared sauce over the stir-fry and toss everything together. Cook for another 1-2 minutes until the sauce coats the ingredients and soaks in.
  6. Finish & Serve: Sprinkle with sesame seeds and serve hot!
