Making My Husband Baked Rice Casserole Lunch Boxes

This week, I made a week of lunchboxes for my husband Dom, including this easy Bacon Mushroom Baked Rice. This is one of the dishes I always order when I go to Hong Kong Style Cafes! I used to make this Baked Rice a lot during college because it is easy, but comes out of the oven feeling super fancy.

In one bite, you have salty, savory bacon paired with the umami-packed mushrooms. The rich creamy sauce has a yummy, slightly spicy soy-pepper flavor. Paired with white rice, it is seriously a comforting flavor combo. If you want to make a vegetarian version, skip the bacon and use 1 extra tablespoon of butter to stir fry your onions and mushrooms.

Baked Mushroom Bacon Rice Ingredients

  • 6 slices bacon chopped
  • 1 onion finely diced
  • 2 cup mixed mushrooms shimeji, cremini, shiitake, roughly chopped
  • ½ tsp black pepper adjust to taste
  • 1.5 cups heavy cream or milk
  • ½ tsp dashi powder optional
  • 1 tbsp soy sauce
  • 2 cups cold cooked rice
  • 1 cup shredded cheese mozzarella, cheddar, or your choice

Secret Weapon For Adding Umami Flavor To Baked Rice

My secret weapon for extra flavor in my Creamy Mushroom Bacon Baked Rice is bacon and Dashi powder. Starting this dish with pan-frying bacon forces out all the bacon fat, which adds a meaty richness to your sauce. Dashi powder adds an instant flavor booth to the cream sauce without thinning it out. If you can’t find dashi powder, mushroom powder is a great replacement.

Oven-Broiled Cheesy Mushroom Bacon Rice

The most iconic part of this Hong Kong Cafe comfort food is the cheesy golden crust on top. To get the most beautiful golden crust, broil your Mushroom Bacon Rice on high in the oven for about 3-5 minutes or until the cheese starts to bubble and brown.

If I’m really lazy and I have leftover fried rice, like my favorite Din Tai Fung inspired Shrimp Fried Rice, this is also a great leftover recipe to save a ton of time. Today, I baked my baked rice casseroles directly in the lunch boxes You can fill your NEW kai dong lunchboxes with creamy Mushroom Bacon Rice, sprinkle on some shredded cheese, and pop them directly into the oven to broil.

Step By Step Guide on Oven-Baked Mushroom Baked Rice

  1. Pan-Fry Bacon: Heat a pan over medium heat. Add the chopped bacon and cook until crispy, releasing its fat.
  2. Sauté Onion: Add the diced onion to the pan and sauté for 2-3 minutes until softened.
  3. Cook Mushrooms: Stir in the mixed mushrooms, ensuring they absorb the bacon fat. Season with black pepper and sauté for another 2-3 minutes for an extra umami boost.
  4. Make the Sauce: Pour in the heavy cream, then season with dashi powder (if using) and a bit more black pepper. Stir in soy sauce for depth of flavor. Simmer for 1-2 minutes.
  5. Add Cold Cooked Rice: Stir in the cold cooked rice, breaking up any clumps. Let it absorb all the creamy flavors.
  6. Transfer & Broil: Transfer the mixture to an oven-safe container. Sprinkle shredded cheese on top and broil for 3-5 minutes until golden brown and bubbly.
  7. Serve & Enjoy: Let it cool slightly before serving. Enjoy your creamy, cheesy, umami-packed dish!
