Korean Tofu Stew Inspired Tofu Noodle Soup

Nothing is more comforting in the wintertime than huddling over this bowl of spicy Korean tofu noodle soup that warms you up from the inside out. Slurping up thick, spicy noodles with a flavorful broth in the middle of the night after a day of editing might be my favorite thing in the world.

I’m starving, so to make the noodle soup more filling today, I used a medium-firm tofu. You can actually use a soft tofu to make it more similar to the Korean Tofu Stew we are used to. This noodle soup is fully vegetarian, and you can add any extras you’d like.

Spicy Tofu Noodle Soup Ingredients

  • ½ onion chopped
  • 1 tablespoon minced garlic
  • 2 green onions chopped (separate white and green parts)
  • 1 tablespoon Korean red chili flakes adjust to your spice tolerance
  • 1 tablespoon soy sauce
  • 2.5 cups Dashi Stock or any stock of your choice
  • 1 serving Noodles
  • 1 servings Medium-firm Tofu
  • 1 egg, optional

Best Noodles For Spicy Tofu Noodle Soup

For the most authentic Korean spicy noodle experience, instant noodles like Shin Ramyun or Neoguri are great options—they have just the right chewy texture to hold up in a rich, spicy broth and soak up all those flavors.

If you’re leaning toward something more filling, dried wheat noodles like kai dong’s Sun Dried QQ noodles work so well. The bouncy texture give you that satisfying slurp without falling apart in the soup. Plus, they’re so easy to prepare!

Extra Toppings That Taste Great

I love adding extra toppings on top of my noodle soup to make it a more filling and nutritious meal. For this noodle soup, I love adding any extra ingredients that are great at soaking up the spicy, flavorful soup.

Mushrooms like enoki or shiitake mushrooms, and veggies like bok choy and cabbage are all great options to add to your spicy noodle soup. Also, nothing adds more flavor to spicy Korean soups quite like homemade kimchi.

Step By Step Guide To Spicy Tofu Noodle Soup

  1. Heat a pot over medium-high heat and add a drizzle of oil.
  2. Once hot, add the chopped onion and the white parts of the green onions. Sauté for about 2 minutes, or until the onion turns translucent.
  3. Stir in the Korean red chili flakes, soy sauce, and minced garlic. Mix well to combine.
  4. Pour in your chosen stock and bring it to a gentle simmer.
  5. Add the noodles and tofu to the simmering broth. Cook until the noodles are tender and the tofu is heated through.
  6. If using an egg, gently crack it into the pot about 2 minutes before finishing cooking.
  7. Garnish with the remaining green parts of the green onions and serve immediately. Enjoy!
