There is something special about chicken and rice, especially when made right; it can be the most delightful meal.

Crispy Chicken with Scallion oil is simple yet delicious!

I make Crispy Chicken with Homemade Scallion oil at least once a week, and it is a staple recipe in my household.

Drizzle the homemade scallion oil on top of anything, and it will instantly elevate any dish! You can pair the chicken with noodles, rice, or a salad.

You dont need to deep fry to make Crispy Chicken with Scallion oil.

The trick to getting extra crispy without deep-frying is to use boneless chicken thighs with the skin on.

Removing the bone will help cut down the cooking time, which will help crisp up the skin while the meat is still super juicy.

Season the chicken thigh with salt and pepper, turmeric, ground cumin, ground Sichuan peppercorn, and if you like it spicy, a little bit of red chili. 

Crispy Chicken with Scallion Oil

The star of my Crispy Chicken with Scallion Oil is undoubtedly the savory Scallion Oil.

Like traditional Cantonese scallion oil, it consists of green onion, grated ginger, minced garlic, and salt.

However, what elevates this scallion oil, is that we will be using the oil from the chicken fat.

The chicken oil is already packed with umami flavors from all the seasoning, which will make the scallion oil super delicious and savory.

PRO TIP: if your chicken thigh doesn’t render enough fat (~¼ cup of oil), add in additional oil and heat the oil over high heat for 30 seconds or until hot.

Ingredients 

Scallion Oil

  • 2 Green Onion (chopped) 
  • 1 tbsp of Ginger (grated) 
  • 1.5 tbsp of Garlic (minced) 
  • Pinch of salt 
  • ¼ cup of Hot Chicken Oil 
  1. Season the chicken thigh with salt, pepper, cumin, turmeric, Sichuan peppercorn, and red chili. Drizzle 1 tbsp of olive oil over the chicken to help massage the seasoning into the chicken. 
  2. Add 1 tbsp of oil into the pan, and turn the heat up to medium-high. 
  3. Once the pan is hot, Pan-fry the chicken skin side facing down on medium-high heat for 7 minutes. Flip and pan-fry for another 5 minutes. 
  4. Add chopped green onion, freshly grated ginger, minced garlic, and a pinch of salt in a separate bowl. 
  5. Remove the chicken and set it aside. Add additional oil if needed, and heat up in total ¼ cup of oil, including the chicken oil. 
  6. Once the oil is hot, pour hot oil over the green onion, ginger, garlic, and salt, Mix. 
  7. Drizzle the scallion oil over the chicken, and enjoy!
