Air Fryer Lemongrass Chicken with THE BEST Scallion Oil

Lemongrass Chicken

Lemongrass Chicken is my favorite dish that I ALWAYS order every time I go to a Vietnamese restaurant. With an air fryer, the skin is fried to a perfect crisp while the meat is still super juicy and tender. The marinate has such an outstanding balance of savory and sweetness while the fish sauce gives the dish so much depth, and the lemongrass keeps the dish refreshing. Give this Lemongrass Chicken with Savory Scallion Oil recipe a try; I promise you will not regret it! 

Scallion Oil

I love to BBQ my Lemongrass Chicken during the summer, but I do not want to stand in the cold in the winter months on my balcony BBQing chicken. Air Fryer has been my best friend when it comes to chicken dishes. It keeps the chicken super juicy on the inside while giving the skin the perfect crisp! If you don’t have an Air Fryer, I have a stovetop recipe that you can find on my website and search “Lemongrass Chicken”. 

Scallion Oil is my favorite part of Lemongrass Chicken. I know it is not a traditional way of serving it, but after trying this in Vietnam during my travels in the summer, it completely changed the game and became my favorite way of having Lemongrass Chicken. This scallion oil tastes good with EVERYTHING, and I mean EVERYTHING. With the combination of Lemongrass Chicken plus Scallion Oil, I can have bowls and bowls of rice. 

Lemongrass Chicken

Ingredients

2 pieces of Chicken Thigh & Leg deboned w/ the skin on 

6 cloves of Garlic Chopped 

2 tbsp of minced Lemongrass 

3 stocks of Green Onion chopped 

2 tbsp Fish Sauce 

2 tbsp of Sugar 

2 tsp of Chilli Flakes 

1 tsp of Salt 

4 tbsp of Oil

Lemongrass Chicken
  1. Marinate chicken with minced garlic, lemongrass, fish sauce, sugar, chili flakes for 1 hour 
  2. After 1 hour, add chicken in the air fryer skin side facing up. Make sure to spray the air fryer before adding the chicken. Set at 380 for 25 minutes. If your chicken has bone-in, add 5 minutes. Make sure to keep an eye on it to prevent it from burning. 
  3. In a bowl, add chopped green onion and salt. Heat 4 tbsp of oil, and once the oil is hot, drizzle it all over the green onion.
  4. To serve, drizzle green onion oil all over the chicken and enjoy!
