If you’re not sure what to do with leftovers from hot pot night, here are some of my favorite recipes to use up the leftover hot pot meat in the freezer! I always buy extra meat when we’re having hot pot for dinner. But, did you know that they’re actually super convenient for cooking quick meals? The thin cuts cook super quickly, and there’s tons of different cuts of beef or pork to choose from. It’s easy to reheat and uses super simple ingredients. And, it’s ready in 15 minutes! With this recipe, I can use up all the leftover veggies in the fridge as well.

This is Enoki Mushroom Beef Roll Rice Bowl is one of the best ways to use hot pot beef! Since the meat already sliced thinly, just defrost until it is soft enough to roll around the enoki mushrooms. I like to use a lean cut for this recipe, like beef chuck, because it holds its rolled shape much better after cooking. But, any cut will work and taste just as good!

Even though the original recipe calls for ground beef, thinly sliced rib eye is actually a great alternative for this recipe. They’re thin enough to get the same amount of browning, and absorbs that saucy bulgogi-kimchi sauce easily. Trust me, you’ll be making these again and again!

This Speedy Tomato Beef Noodle Soup is one of Dom and I’s favorite late night bowl of noodles! With hot pot sliced beef, I can just take it out of the freezer and cook it right away. The fattier cuts, like brisket, are best, because that rendered fat melts into the sauteed tomatoes for broth with a ton of extra flavor. Since it takes only 20 minutes, it’s the speediest way to get a cozy bowl of noodles anytime we want.
